Well the best laid plans went awry as we bought T.O. fish and chips on the way home after our massive 2 store grocery shop. ( exhausting ). We did set a new record for getting all the groceries put away though....the aroma of the food was incentive!

Enough of that...... Later in the week we are going to make a Portuguese soup who's ingredient list hit all the right notes for us! Bought the Portuguese sausage and spinach for it today, ( we're swapping spinach for the yucky kale they use ) but everything else we pretty much had here.

DH has requested ( whenever I am up to it ) more lemon chicken! Oy! Did he know how much work that was? I will NOT make a full tray of the sk/bl breasts if I make it again. DS had planned to take another stab at Beef Wellington....so we'll just wait and see who gets in the kitchen first I guess?

Steak for us as well! DH cut 3 thick steaks off of one of the Metro roast of beef. They are marinating atm.
Sides will be smashed spuds ( oven baked till soft, pressed flat, brushed with butter, EVOO and salt, baked again, flipped and last baking to crisp them up outside ) , brussel sprouts, green beans for veg.
We will be eating quite late tonight though as we had indulged in a massive breakfast after all that snow clearing this morning.
Not like it made ANY difference, more snow has fallen fell continually....ugh!

I actually had a bulk package of the shelf stable ones that I had tossed in the freezer, so I just used them frozen and increased my cooking time by 2 minutes.

@crafter I made your stay a bed stew yesterday. I jotted it down when you posted it awhile ago. It was really good. I made it with mushroom soup and had a pan of whole wheat bread in the bread maker ready at the same time. Lots of leftovers for today

That is so wonderful to hear @KelJo ! I use mushroom soup when I make it as well! DH likes me to double the recipe when I make, he says there can never be too much left over stew lol.

I love some of your recipe ideas too. I never would've heard about some of the cool east coast recipes. Have a great day!

Time to dig out from yesterday snow so want to keep dinner simple. Going to put Balsamic Chicken in the Slow Cooker, then closer to dinner I will make a batch of rice and heat up some stir fry veggies.

Last night was buffalo cauli burgers. The pic was from the first time I made it almost 2 summers ago. I don’t always have the energy or time to snap pics.

No idea about tonight’s dinner. I started the day with a 12km(30 min) peloton ride through Iceland followed by what was supposed to be a light weight upper body workout but I used my 8lbs instead of the 3 or 5’s the recommended, then the full body stretch and the calming meditation. I also had to do my rehab for my foot injury and loads of laundry and some cleaning.

Decided on homemade pizza since DH mentioned pizza was on his mind so I made it with a side salad to have after his workout.

It's chinatown dining week here so i'm going to support local businesses by ordering their take-outs; most are $10/dish so not bad.

I'm trying to make a roast beef, roast carrots and potatoes tonight. DH loves beef rare yet I prefer it well done so I'm slow roasting it...fingers crossed he doesn't choke on dry meat like last time I tried to cook it the normal way. Wish me luck!
