I have another whole chicken roasting in the Air Fryer. Fully herbed up within an inch of his....well you know?
Will have that with a mango salad with finely chopped mint leaves and some heat! ( crushed red chili pepper flakes )
Veggie sides are Brussel sprouts, green beans, broccoli and carrots. All fresh and steamed. No spuds!
DH stepped out to grab Frankie some mealworms. I asked him to go to the NF after that to find some better
priced gala apples and either mandarins or clementines as the WM prices were insane!
It should all be ready when he returns.

Maple Leaf game soon starting!!!
This morning I forced myself to get busy. Wanted to make some kind of a hearty stew but ended up making a sausage/potato casserole.
Reason was I went with what was in the freezer and used up some fast spoiling yellow onions as well.
Baked up DS some sweet potatoes, used some of the soft insides to mix with diced shrimp and crab leg meat. ( took so long to pick out
all the meat from the skinny crab legs ends. ) I mixed in bread crumbs, dry mustard, herbs, garlic and cream cheese.
Grated old cheddar went into the bottom of 10 mushroom caps, stuffed plenty of the crab mixture on top, then added more cheese.
The stuffed mushrooms are just about to go in the oven. I wanted to make sure they were hot and fresh to have with the sausage potato
dish.

Saturday we had burgers on the BBQ, toasted our buns, homemade potato/egg salad and carrot/cucumber sticks. Tonight we may be looking at straight on salad.
Both of us feel sort of " meh "after the Maple Leaf's loss last night. Clearly we need to wean off of them....lol.

We decided to do try something different - not authentic mexican birria or barbacoa. Cut a beef sirloin roast into big chunks, browned them in a ductch oven, remove them, added diced onion and garlic, add beef stock, homemade taco seasonings and a can of la costena Chipotle pepper sauce. Add the beef back to pot. Cover with lid then into the oven at 300 C for 4 hours. When beef became tender. I shredded it in a large bowl. Puree the liquid with onion into a smooth sauce. It turned out very good and it was easy. Not another boring taco dinner.

Tonight is a fend for yourself night. There is tons of homemade pasta sauce in the fridge from yesterday so I am guessing we will make pasta for round 2 for easy dinner.
I am on a mission to get this house back in order so house cleaning/organizing and not making dinner.
Also thinking today is the day to drive to the casino for free gift (Roots travel bag!) use free slot play. Have a free meal. and gas up on the cheapest gas!

The guys also fended for themselves on Monday, their work meal was leftovers from the BBQ on Sunday. Today they made cold cuts on large hoagie buns, accompanied by baby cucumbers, Baby Bel cheese, sliced watermelon, a banana and an apple each. Some of that is eaten at the 2nd break. For myself I dipped those mini pita things into hummus
last night for dinner. I warm them up and they get super soft!
Not sure what I'll eat tonight?? What pairs well with a Maple Leaf WIN?? Please!! let them end this series with the Senators.

Today DD and BF are arriving for the weekend. We are having homemade focaccia with ham dip, roast lamb and potatoes and veggies. I think for dessert I will pick up some ice cream bars as it is supposed to be hot today. Well er I mean pick up more ice cream bars as the ones I already picked up seem to have disappeared!

The Leaf's finally did it. Round one done. Now maybe I'll get interested in cooking a nice meal. The guys are all about sandwiches for their work meal.
Waiting for something ( meat ) in the freezer to inspire me to cook it. Dentist appt. very soon so my mouth will be all " frothzen " when I come out.
Breakfast was postponed and now I'm thinking lunch may not happen until that numbness leaves my face.
