@harbie ya know I never ever measured before either. When it comes to spuds, mashed, boiled or otherwise I used to just dig in, damn the torpedoes.
However, with this plan, trying to balance the dinner plate out I wanted some of everything, my protein, veggies and of course simple carbs are kind of a no-no.
UNLESS you eat a small serving. Absolute torture, much the same as giving myself a 1/2 cup of DH's delicious cooked basmati rice that he cooks in pineapple juice!!

Mmmm, salmon steak ( pan seared ) , raw snow peas and baby carrots. Greek yogurt with berries.

Mmmm, I do love making a beef and green pepper stir fry. Methodical in my approach, but I like each veg to cook to just the right tenderness or crunchiness.
The beef
I used was blade steak ( a small roast ) that comes in those thick plastic bags, just cut it into thin strips and marinated for 1 hour. So tender.

Made the fellows up Shake 'n Bake boneless pork loin " slabs ", boiled new potatoes and boiled carrots all for tomorrow's work meal. I was able to portion a little of all of the items formy own late lunch/early dinner tonight. Mmmm, really yummy.

Had a late lunch so I wasn't very hungry so breakfast for dinner it was. French Toast with Blueberries and Strawberries.

Dinners have been low key lately, however I'm planning to BBQ up some really large shrimp tonight. We have about 6 cobs of corn that need to be gone asap.
The oil in my tiny deep fryer is on it's last " go round " so I might be bad and fry potato wedges into chips, then empty, clean and refill with new oil. We'll see
what else the guys feel like having as well. The last of the garden green beans are par cooked, so another easy side right there.

we haven't had subway in awhile and we got some coupons in the mail yesterday, so today, i'll be picking up 3 foot long subs (classics) for $24.99 (with coupon). Oh how I miss the $5 then $6 footlong promo.

Bowls were on the menu last night. Quinoa topped with sweet potatoes, broccoli and my gardens Russian garlic roasted with Cajun seasoning, shredded red cabbage, mini cukes, cherry tomatoes, shredded romaine, sliced mushrooms and of course seared tofu with a nooch dressing .

Last night I was too lazy to make my own flatbread but had found sale priced Naan at WMart. Too lazy to make the my homemade tzatziki, so I slathered Dians's BBQ sauce on my naan.
Too lazy to go out and BBQ the skewers of pork souvlaki so I took the meat chunks off the stick and plopped them into a frying pan sauteing them dark, adding white wine in at the end! Not too lazy to eat that up! Mmmm.

@walkonby , love it. Sounds like dinner in our house.
Last night were supposed to get storms at dinnertime, just before I needed to start cooking the power started to flick so I held off dinner.
We did not lose dinner but I did not take anything out so quick pivot, pulled Homemade Burgers and that was dinner.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Had to pivot with Dinner at 3:50 this afternoon, I had planned on Mozzarella Chicken but Mom said her tummy was off so I did not think the acidic tomatoes would be good so ..................... Plan B.
I pulled a pork tenderloin from the freezer and made a one-pan meal with Roasted Carrots, Onions & Potatoes and the Pork Tenderloin on top.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

thawing a large tray of chx thighs for chicken adobo later tonight! Not sure yet what the sides will be. So pumped just now watching Canada win a medal at the FIBA for the first time!

Finally made Mozzarella Chicken for dinner, I think I have been saying for a week I should make it as I had Cherry Tomatoes to use up but never made it. Tonight was the night. We served it over Pasta and I had a Cucumber Balsamic Salad on the side.
