Decided to go with a Sheet Pan Dinner so I am making Garlic Butter Roasted Potatoes with Chicken Breast and I was going to make Brussels Sprouts but after digging I did not come across any (I have a large bag in there but it is in the bottom of the chest freezer, that was too much digging), but found 3 bags of Green Beans, so Green Beans it is.

Those precooked and portioned frozen lasagna squares I made a short while back came in extra handy. The guys thawed 2 for their work meals today.
Tomorrow they are taking perogies ( not homemade but meh? ) . This week is just too exzciting isn't it? We dodged the snow too, a very scant dusting
was all that fell. It is cold out though.

Thanks to @walkonby post I was craving lasagna but not all of the work so I made Instant Pot Lasagna with Cheesy Garlic Naan.

Needed to keep it simple last night between moving a shelving unit to our main floor and doing some running around I was tired by Dinner Time so kept it simple with Chicken Fried Rice & Dumplings. I also had some Cucumbers on the side with Rice Vinegar.

Roast beef and Greek pork loin. 2 things out of the freezer.

Beef tenderloin, roasted mixed vegetables and potatoes, piroghi (?) homemade buns and assorted baking for dessert. All being served at DD's so no cleanup for me!

The guests for Christmas Eve are arriving in about an hour. Sleeping over! So our eating will start around 1 p.m. today with a Charcuterie Board deluxe!
I went with meats and so many cheeses, made up a separate fresh fruit plate as well. Two different homemade crackers and some store bought ones too.
Later in the evening we're having Cornish hens ( done in the Air Fryer ), smashed russet potatoes, Pastizzis ( ricotta cheese ones ), and homemade lasagna.
If there is room after that maybe some Hawaiian sweet rolls and a Christmas Tree shaped Cinnabon styled number. ( but ONLY if we have any room left ) ha ha

Last night was Christmas Eve dinner, we had:
A Charcuterie Board to start with Cheese, Salami, Crackers, Grapes, and various Dips.

Dinner tonight did not go as planned as our Turkey just did not want to cook so Turkey will be dinner tomorrow now and after a Quick switch up we had:

Change in plans but dinner remains the same. We were supposed to be having Dinner with Bro but Mom is in a lot of pain so dinner at home we are having:

There are serious leftovers lurking in the fridge and cold room, so there will be NO new cooking for 2 days. I had made up an experimental roasted beet/baby cucumber/cherry tomatoes/feta cheese and pumpkin salad and had it out on the Christmas Day table because I am certifiable when it comes to " did I make enough food? "
It went over better than I expected. Only 1 DS declined ( I think his face said " ew! beets! " ). DH and I also had more after some of the guests had gone.
Then on Boxing Day we had it again along with our Breakfast for Dinner of French Toast, bacon, fresh berries and pineapple.
One other new thing I never tried before was roasting fresh figs in brown sugar/cinnamon with sprigs of fresh rosemary. After they cooled we drizzled threads of honey
over them. Delicious!
If anyone has ever wanted a casserole on hand that hits the spot, try this one! Now tbh, the original recipe ( called Wife Survival Breakfast ) uses slices of white bread and tops the cheese with crushed corn flakes, but I wanted less carbs. I love that you assemble and refrigerate overnight, then pop it in to bake in the morning. Can also be frozen after baking.

We had some leftover ham to use up so we tried this recipe a mac and cheese with diced ham and peas...I used some of the 5% cream we bought for SIL for the roux and added more milk. I got a whole pork loin yesterday and divided it into 3 portions. Hubby is slow roasting it with a mushroom gravy in the oven. Also have a tray of baby potatoes and carrots roasting in there too. Mac and cheese is done.

When I made up this casserole for the first time, I inadvertently made nearly double the filling ( probably from pulsing a large whole head of cauliflower and using too much ground sausage. ) I simply froze half the filling.

The casserole was an instant hit for Christmas Day brunch and any leftovers disappeared right away. The guys worked Thursday and then today, then off again for another stretch of vacation days. ( Congrats btw @Frugalbigmama on all of your vacation time!! woo hoo ).
They took in a turkey and sides meal on Thursday so that's the end of the Christmas Day food. Twiddled my thumbs on what to give them for today, then I remembered the frozen casserole filling!
Assembly of this one was much quicker. Baked and good to go for work! Hope the leftovers from this pan get eaten up the same way.
