Tonight we had leftovers because we had quite a few in our fridge, Mom has French Onion Pasta Bake and I had Lemon Chicken Orzo soup with Homemade Bread.

I did it again! Made lasagna. Deep layers. Made 2 large casserole pans, The smaller pan ( 9 x 11 ) I'm going to let cool, then refrigerate, then portion out servings to be placed in the freezer. One never knows when the mood for lasagna will strike again and this way I'll have individual portions to reheat.

Last night I made Mozzarella Chicken over Pasta with Garlic Toast, I as going to make a salad but I didn't want anything cold.

Mom wanted Chicken Wings but since I am not a fan I am having BBQ Chicken Caesar Wraps and we will both have Oven Fries.

didn't have to cook anything Thursday, crumb coated baked pork chops and lasagna still there to eat up....hooray!

I was going to pick-up pizza on my way home from work but we ended up finishing at 11:30 instead of the planned 2 to 3 pm so needed a plan b.

Decided on Dumplings with Homemade Chicken Fried Rice, feels like Take-out but cooked at home.

Tonight I am making Baked Pork Chops with Roasted Vegetables, I used Potatoes, Sweet Potato and Carrots.

Dinner has been tricky the last few nights as we have been eating at odd times especially after attending two Christmas lunches.

Tonight we get back on track, Homemade pizza with Pepperoni, Onions, Mushrooms, Bacon, Cheddar & Parm with a side of Cucumbers.

Nice for you to be back into the regular dinner routine @SassyAshley . This morning I decided to get more meat out of the freezer and pressure cooked up 3 small trays of thin beef short ribs ( Korean call it Galbi ) along with 2 small trays of thin strips of stir fry style beef. Added onions, red wine, raspberry vinaigrette, soy sauce. Freshly mashed spuds, made a gravy from the meat drippings.
The guys don't really eat a first meal on Saturday until close to 6 p.m. so anytime now!!

Tonight was Homemade Burgers with Oven Fries Poutine.

DS treated us. Festive Swiss Chalet meals. ( I think he was just craving some of the Lindor chocolates. ) I chose wings and sweet potato fries. The guys had the chx and rib combo. DH picked it up rather than pay a delivery fee.

@walkonby , those delivery fees can be insane, one of the location pizza shops in town, it is almost $15 to get delivery.

Happy Monday. Mission to clean out the freezer not going so well lol.

Today is a new day. I am cooking up fresh lean beef now and will make some into taco meat and the rest I will use to make a lasagna (pulling cottage and ricotta cheese from the freezer!) So it guess it counts? lol Tonight will be taco salad for dinner and the lasagna tomorrow night. Bit of plan...its a start!
