    @walkonby , I made your hubbys pineapple rice. Well, I used a can of diced pineapple and juices, little veg stock and a healthy splash of pepperoncini juice. SO GOOD. Sweet and spicy. Give your Dh a high five for that.

    DH and I are going out to dinner tonight to celebrate that fateful day when I tricked him into saying " I Do! " lol meh?? Suck it up Buttercup, it's only been 44 years.
    So why am I posting in the dinner thread? Mainly because we both love ribs, we make them at home because they come out fall off the bone tender and are usually on sale " somewhere ".
    Unless you have pockets lined with gold, ordering a double rack when dining out may bring on heart palpitations when the bill arrives.

    This is what I'm making for DS to enjoy as he's staying home. All that meat for under $15.00! Hope he saves us some? I'll try to remember to post cooked picture when they're all done.

    Cooked exactly as DS prefers them. Naked with just salt and pepper on them. The photo is deceiving, that bowl is deep, I swear they're all there....bwahahaha!

    I had made a broccoli salad with cranberries, pecans, red onion last night so we had the leftovers of that and we ordered a plant based Mediterranean pizza from Panago for dinner tonight. We did a massive 19.2km ride this afternoon and we were both too tired to cook.

    An unusually early Saturday dinner we had ( before 5:30 p.m. ) but what a different meal it was. I had my 3 slow cookers working at the same time ( hoping not to blown a fuse, lol ) from early in the day. Made Chicken Pho, a Prawn curry and a cauliflower/red lentil/spinach curry. I made both basmati rice for the curries and also had a pkg. of Roti on hand.
    Soup recipe called for a whole chicken but I used skl/bnl thighs to cut down on the fat, and the broth was so damn good! ( probably the added fish sauce at the end ).
    Both curries had more flavour than heat ( which I prefer ). Side dishes were a mango salad and raw baby carrots. We ALL fell asleep after dinner....ha ha

    Dinner was simple and a mish mash.

    Boiled taters with homemade tzatziki, mini cucumbers with balsamic and a field roast hot dog.

    There is the last of the crumble left for dessert but I’m full. Dh will have it.

    Last night was blueberry pancakes

    I’m thinking about lean and lentil soup tonight. It’s a cooler overcast and slightly rainy-ish start to the day plus it’s easy. If it does heat up this afternoon we will just turn on the AC

    The weather has returned to stifling again, so I've not had to cook up any hot entree meals for the guys work meals. They've dragged in sandwiches since Tuesday. Their assorted sides were coleslaw, baby cucumbers, compari tomatoes, hard boiled eggs, radishes, berries...oh yes and some Baby bel cheeses. I enjoyed my regular meals since I'm spoiled with the A/C on.
    I've made lamb chops 2 times....these ones were are so small but delicious. Tonight it is pan seared Red Snapper, steamed cauliflower and Jicama sticks.

    I came back from a long lunch getogether with some ex-coworkers and found my parents just came to drop off some pho (vietnamese noodle soup). I don't think today could get any better. So thankful for the people in my life and the food!!!

    We just had a late lunch so that’s counting as dinner. Individual nachos with tons of cowboy caviar that I made yesterday.Mmmmmmmmm

    not tonight but 1 night this week it'll be corned beef and cabbage. In the pressure cooker, easy peasy! The guys seem to want to take in burgers so I'll see if they BBQ them up in time.
    I'm contemplating using sknl/bl chicken for my dinner, maybe just in the air fryer sprinkled with dried herbs. Has anyone ever weighed out 80 grams of potato? I wanted spuds with my dinner last night, but the reduced calorie thing was harshing my melow! It was 57 calories just for them. I survived....lol
