Made the Big Mac Taco that's making its way around social media. Made it vegan of course and it was SOOOO good! Served with garlic scape salt seasoned fries. Totally earned it after our 15km ride yesterday.

Probably have some of the Peach Ice Cream for Dessert, this Ice Cream has been taunting in the Food Basics Flyer for weeks and this week I bought it. Had some last night OH MY so good.

Yesterday made a black bean and corn crispy burrito after our 16.4 km ride! Protein packed, cheap and most importantly…..fast!

Treating myself to 5 largish cooked shrimp ( ice cold ) with cocktail sauce, cooked carrots, raw tomato and some sauteed mushrooms. Also a Mini Lavash Pita with a hard boiled egg mushed inside with a scrape of Hellman's. Maybe a small coffee, depends when I start prepping.

Mmmm, finished my cup of soup, a few scallops and cooked carrots, along with cucumber logs spread with a cream cheese/spinach filling. For my snack I microwaved 2 Poppadums and had them with mild salsa.

It was a Grexican night. Greek pasta salad and Mexican black bean patties. All homemade. Oh ya, and an avocado on the side. Mmmmmmm carbs and protein.

lol!! " Grexican night " , never heard that one before @harbie
I'm now into a totally diffident set of carb wafers/crackers/crisps? Not sure what to refer to them as but with each meal I usually have 2-3, spreading minimal amounts of Greek yogurt OR hummus, sometimes mayo on these then top with a variety of either sliced fruit or veg. The end results are endless! So darn yummy which helps me to ward off the temptation of evil bread...ha ha
Another advantage is they stay crisp even though they have moist toppings on them.

@walkonby It’s just a take on saying international night or what I like to call “we’re starving and what they heck do I have in the pantry that’s fast” night

bwahaha!!! I sure know that feeling when you want to eat NOW! What is ready instantly? I used to have a terrible habit of snacking the ingredients as I chopped or prepped the meal
( or the worst! sometimes eating cheese as I grated it ) . No more of that....
