What's For Dinner?

Leftovers of the Mexican burritos but in bowl form since I ran out of wraps and there’s still a serving left!

Last night was Grilled Chicken and veggies (Peppers/asparagus/mushrooms/onions) and perogies.

Tonight- Burgers on the bbq

The last of the macaroni salad and vegan dogs for Dh and I had a big bowl of oatmeal.

The guys took large fresh salads again for their work meals with a hard boiled egg each and some fruit. I've been focused on getting to as much of the fresh produce ( asparagus, green beans and broccoli ) before they turn. My protein for dinner was Lilydale oven roasted chicken breast strips dipped in a tiny bit of sweet thai chili sauce. Mmmm.

yesterday was leftover for us, so today my hubby wants to go to costco as he needs to get gas for his car, they'll have hot dogs, fries, gravy and i'll have wings. Several costco in and around my area no longer have wings on their menus. I hope it's not a trend so i better get some wings while i still can

my dinner tonight will be a hodgepodge of carefully selected veg/fruit/protein and carbs with as little fat as possible so as not to go over my allowances. Now doesn't THAT sound appetizing? Not! ha ha

Managed to make a pretty delicious dinner last night after a REALLY long day. A huge fresh salad with a variety of lettuce and kale straight from my garden, a fabulous if I say so myself, potato salad and bbq tofu.

I have a big pot of split pea and lentil soup simmering away. Mmmmmmmm it smells so good and a great meal for a cooler and wetter day today. Plus it’s healthy and super inexpensive

Another cooler day meant another soup. Last night was Mexican lasagna soup but with macaroni shells instead of lasagna noodles.

Dh took some pea/lentil soup for lunch yesterday and I gave the rest to my parents.

The leftover Mexican soup will be lunch today.

Last night we made Homemade Chicken Tenders with Homemade BBQ Sauce.

I made Potato Wedges in the Air Fryer, I used to make these all the time and not sure I stopped, they were good.

I had a Caesar Salad because I am a sucker for Caesar and BBQ Sauce, they go perfectly together.

As well I had some cut-up cucumber because I could not get the lid on the container.

It was a little cool and rainy this morning so I pulled out a Beef Roast for dinner. To go with it we will have Mashed Potatoes, Gravy and Broccoli.

Lazy after our pickle ball game yesterday so last night was breakfast sammies on sourdough. McCain hash browns and just egg with a tiny bit of cheese and hot sauce on sourdough bread. Love breakfast for dinner!

Fell asleep a couple of times while trying to watch that 3 hour Avatar movie. So at 8 p.m. I awoke to realize I had missed dinner and my late snack. ( HRMPH! )
My goal is to eat my last morsel of food no later than 7:30 p.m. but.....oh well.
I ended up having a 2 cup serving of my red pepper/cauliflower soup, a small piece of Lavash sheet spread with sweet thai sauce and pork loin slices inside. A baby cucumber log with 1 tblsp of just peanuts peanut butter inside and topped with fresh pineapple slices and a half a banana.
Against my better judgement I drank a small coffee. I suspect my breakfast in the morning will be late, no way I'll be hungry before noon now.

Pancakes. Banana chocolate chip pancakes to be exact.
