    this is a busy week for us here, juggling childcare and work. So i made the filling for southwestern rolls last night. This afternoon, when we get home, all i have to do is wrap the filling in tortilla then deep fried. This is a copycat recipe from Chili's southwestern rolls, a chain restaurant that is no longer around in my area.

    I was exhausted after work and so was Dh. We weren’t crazy hungry for a dinner so we had 3 different types of hummus with veggies and bread.

    What a weirdo dinner/late snack combo I had around 7:30 p.m. Just trying to fit in the last of my calories for the day. Spread a scant 1 T. of P.B into 1" pieces of celery, then sprinkled my delicious parsnip crispy things over top. 2 more Ryvita crackers with tuna. Berries and other fruit on plate, as they are. A tiny ( hilarious ) dish with 12 grams of a burger and 1/2 an ounce of a pork loin chop with 35 gr. of potato. All diced up and topped with gravy. A treat of some light Swiss cheese melted onto my 2 poppadoms, had with salsa.
    Yeah, delicious but weird.

    Last night was one of those "What do you mean we have to have Dinner, didn't we just do that last night" nights.

    Finally decided on pulling some Dumplings from the freezer, loving the Costco Dumplings, we have both a Chicken and Beef option right now, we just pop these in the oven for 20 minutes. Then grabbed a package of Ramen Noodles (we buy the 6 packs of just noodles with no seasonings), add some mushrooms, peppers & green onions with an Asian sauce made of Soya Sauce, Garlic, Ginger, Sesame Oil and Hosin, Stir Fried it up, Yum.

    Tonight steak, baked potato and grilled veggies (onion, brocolli, carrots, peppers and snow peas- leftover veggies from bbq yesterday that my sister sent me home with!) on the BBQ. Yum!

    our local asian grocery store T&T had king oyster mushroom on sale $2/pack. I got 2 but only fixed 1 because my hubby and our girls don't eat mushrooms so more for me . Made pasta with a garlic cream sauce, pancetta and saute mushrooms.

    Lunch was quite large, so my dinner and snack will be combined. Hoping to be hungry by 7 p.m.?? having snack/finger food stuff, Poppadums with salsa, Ryvita crackers lightly brushed with Mayo, cucumber slices on top. A variety of fresh berries, cantaloupe, pineapples and pear. Total grams of fruit is only 110. I'm still allowed another 1 cup of soup but something tells me I won't want it.

    Having our new favourite meal tonight, Dumpings from Costco, we have both Beef and Chicken with homemade Chicken Fried Rice.

    Since I am trying to increase my produce intake, I am not bad at eating produce but I would like to eat more, I am thinking I will chop up some Cucumbers, Peppers & Carrots to have on the side.

    I've been anticipating since breakfast about dinner, a chance to have some of the Prime Rib roast meat that I cooked a few days ago. I'm allowing just 2 1/4 ounces as my serving but will have many side dishes to round out the plate. Sauteed mushrooms, zucchini, onions and celery. Steamed broccoli, boiled spuds and carrots and a mere 2 tblsp of my favourite canned gravy ( Franco American beef ).
    The individual servings of the sides ( in grams ) might seem funny but when they're all together it works. Bon Appetite!

    dropped my girls off at my parents then went out for a late lunch with my ex-coworkers, went back to my parents and my mom made me a bowl of crab noodle soup, then i took my girls back and we went to dollar tree for dempster bagels and english muffins at $1.50/each. My hubby and our girls are making some kind of cinnamon buns recipe that he saw on tiktok.
