The guys are splurging on marinated and BBQ'd skl/bnl chx breast, spicy corn on the cob and cooked carrots while I get THIS to eat! Cooked PLAIN skn/bnl chx breast meat diced up, mixed with sweet Thai chili sauce and spread into cucumber boats with 3 steamed veg!@ I win!

Asparagus with mushrooms
Roasted potatoes.
All we have to do is turn the bbq on and toss the packets on the grill!

A bit of canned fish....aka sardines and tuna infused with chili pepper. The sardine meat goes into a very small wrap, the tuna gets mixed with a few drops of Coleslaw dressing and spread into baby cucumber boats. A 5 cup garden salad with diced red pepper, balsamic dressing and crushed up Poppadom bits for crunch. 2 Compari tomatoes and a 5 calorie Jello Smooth fresh brewed coffee after.

The guys have enough work meal options to keep them busy, however no one wants to eat lasagna 3 out of the 5 work days....so I have salted the beef braising ribs and placed them in the fridge for 24 hours. Then I will start the pressure cooking process. Turns out such a tender, flavourful product in the end. They can pair that with any side. Rice, spuds? Their choice. My main protein tonight will be half a seared salmon steak!, which are out of this world!

I’m trying to lower my cholesterol, which was high for the first time in my life.
Meal prepping this weekend does not include baking squares for my work snack.
I have prepped red grapes, sliced apple, sliced cucumber, celery sticks, and the last of my garden carrots. I’ll have a toasted bagel sandwich for my work lunch on Monday.
I just made a medium sized pot of soup, and mixed up my recipe a bit. (Lean ground pork (well drained), one yellow onion, diced celery, the last of my frozen garden tomatoes, mixed vegetables, frozen diced butternut squash, Pearl barley, and some seasonings…but it still tastes a bit bland to me).
I have some stuffed pasta with tomato sauce in the fridge. Chia seed pudding. Roasted diced sweet potato, seasoned extra lean ground beef, just need more cooked veggies to go with that lunch.Help me out with Swagbucks and we can both earn gift cards and PayPal money

I was able to easily lower mine by having a bowl of regular Cheerios with bran buds sprinkled on top every morning. It works. Even my GP does it.

It will be a Mother's day dinner today for us! ( lol ) we ALL screwed up thinking it was this Sunday and had already bought the frozen lobsters, the corn on the cob, the very ripe mangoes ( for a salad ) and frozen strawberries for the daiquiris! Only thing we COULD do was go ahead as planned and have another one on next Sunday! I might get to vote on the main course again and King Crab legs seem to be top of my list! ( I love the shellfish family ). Happy " early " Mother's day all!

Some dinners just " come together " with no fuss, no muss.....oh man, what a completely delightful afternoon and early evening. Had to have dinner early as the Leafs game starts in a few minutes. The lobsters were such a hit! DS grilled the Mexican corn on the BBQ and DH blended up the strawberry daiquiris. I had the tough job of thawing the lobsters and wrapping them in foil to heat up in the oven....Whew! what an effort I made there. Mango salad AND Caesar salad rounded out the table....oh yes and the melted butter! Drool!
As were were in the thick eating DS commented that THIS particular menu may not go over so well in a crowd...so messy and using the hands is the only way. Cheers!

last night hubby bbq'ed Johnsonville all beef sausages, and they are delicious. Also had fries in the air fryer and vegies and a nice garden salad.

the entire day ( Saturday ) is a fend for yourself day. Since we will be doing a re-do of a Mother's Day feast tomorrow, ( now that we have the correct Sunday here ) I say there is no point bogging down both of my days with food prep and cleanup. Tomorrow's menu will be T-bone steaks for 3, foil wrapped russets to join the steaks on the charcoal grill, spicy Mexican corn on the cob ( again! ) , we cannot stop eating that stuff! The NF sale of cobs for .33 each sparked it again.
Another mango salad...and a fresh new batch of mint leaves are out front so I won't have to buy any all summer. It goes so good in that salad even though I prefer cilantro leaves, DS hates that stuff...ha ha
There will be other sides, maybe a low calorie dessert? and the alcoholic drink will be banana daiquiri's! Hope all the Mom's get treated as well tomorrow!

Here it is Wednesday afternoon but I cannot fathom cooking anything for anyone, including any of my many calorie modified recipes. Just not in the mood.
Been chilly off and on today so it is possible I need sleep. Being sleep deprived can affect my desire to hunt or gather. I'll check in later on if a meal appears!
