Last night I made pasta sauce for those that wanted to make pasta or the leftovers from Monday night.
Tonight we have leftover roast beef dinner and pasta. I shouldn't make anything else so the leftovers are eaten.

My dinner tonight will be " who the F knows ? " because I'll be listening to my hunger meter. If it doesn't read " urgent, feed me " then I'll take it slow.
A smaller plate with some lean protein, lots of steamed veg or a salad, but zero white simple carbs.

at 5:30 I had a salmon steak, with mushrooms/onions, green beans and a homemade salad. Grated red and Napa cabbage, added some chopped up iceberg, grated carrots.
Mmmm, had to add my feta cheese, black olives and a few dried cranberries. Raspberry vinaigrette dressing lightly drizzled. Felt like drinking plain water today, all day?? weird.

my late brunch ( had an ultrasound early so no eating beforehand ) consisted some of last night's dinner. I simply couldn't finish all the salmon steak, mushrooms/onions mixture or all of that delicious salad. Best part was these calories were entered in Thursday's tally, so I ate 300 free calories. Added a mini pita filled with tuna with a schmear of mayo inside.
I still have lots of wiggle room left for dinner tonight. Might be crab legs and shrimp, a bit of each.

I made 2 casserole type items for my diet. A Shepherd's Pie using extra lean ground chx, green beans, onions, carrots, mushrooms, red pepper and mashed cauliflower as the potato replacement. A chili using extra lean ground chx, same veg as the S.Pie adding chopped up red cabbage, 2 cups of cooked beans and chili powder. 2 cups pasta sauce to make it more chili like. They both turned out very good. Each gives me 4 servings and I only used one pkg. of the ground chx. to make them.

When I was going through the fridge seeing if anything needed to be used up I saw the small container of Taco Meat did not get broken down and frozen so instead of freezing it, I make Taco Bowls:
Base of Lettuce and Rice, added some Onions, Peppers and Mushrooms to the meat, topped with Cheddar, Sour Cream & Salsa, Cucumbers in mine, Cherry Tomatoes in Mom's.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Tonight is sauteed coleslaw with onions/other veggies I add with lean ground beef. I am going to make a batch and meal prep my dinner for the next few nights.
May make another mac and cheese tomorrow if DS is feeling better (he is the one that eats it mostly)
