    I boiled red cabbage, green beans, carrots and onion in a vegetable broth. It made a very tasty soup and was perfect for my clean eating diet. I sauteed up a small
    piece of salmon to go with.

    Pulled a Homemade Meatloaf from the freezer, made a huge batch of Mac & Cheese and tossed a Steamer Bag of Broccoli in the Microwave and dinner was made.

    Lots of leftovers which is good as I have a retirement dinner to attend this week so now Mom has dinner without needing to cook.

    Lunch was a serving of the red cabbage soup and chili. Dinner will be a 1/3 bag of Taylor Buffalo Ranch brand salad with Calorie wise Greek feta dressing. I add a few dried cranberries into it and 15 grams of diced up feta cheese. Dessert of 0% fat Greek yogurt with sliced banana and blueberries it.
    Oh man what a blowout game today was. The Eagles have beaten Washington 23-55. Boring game tbh. Now to watch the Bills " maybe " beat the Chiefs? Fingers crossed for Buffalo!!

    Tonight I made Baked Chicken with Feta and Sundried Tomatoes and served it over some left over rice and made Green Beans and Carrots on the side.

    The carrots were a last minute additional as I swear I just bought green beans but could only find a small part bag in the freezer which was not enough so added some carrots to bulk it up

    Last night I went to a retirement dinner, I had the Pesto Chicken Penne Asiago.

    I personally find Pastas can be hit and miss at restaurants but oh my gosh this one was so good. The moment they sat it down in front of me it smelled amazing. I loved that it had a ton of veggies in it, it was so good.

    My dinner ( or maybe lunch ? ) will be some freshly made Shepherd's pie. The filling for this recipe had lean gr. turkey, S & P, diced onion, carrot, celery, minced garlic, thyme, rosemary, tomato paste, green beans and red lentils. Bit of a different method too, it all got cooked up in the cast iron pan, simmered to reduce the 3 c. of water as the lentils cooked.
    Then the topping was a mashed mixture sweet potato and cauliflower. Then set under the broiler to brown the top.

    Agreed! And I can make awesome pasta at home so usually don't order that when out.
    Last summer we stayed a night at Blue Mountain and went out for dinner with a group of us at an "Italian Restaurant" Even they couldn't get it right. Out of 8 of us that had pasta (3) it was all under cooked and terrible. They ended up not charging for mine and gave us all free dessert and coffee etc. The worst part is all of us were quiet about it - it was my sister that spoke up and she didn't even have pasta.

    It will be a large dinner sized salad again for my dinner. I'm still loving getting those kits on sale. Different brands like Taylor, Fresh Express, PC. So many varieties too, like Asian Sesame, Buffalo Ranch, etc. I don't use their packaged dressings, but sometimes I use the crunchie packets of almonds, cranberries, or the ones with feta cheese etc. Mmmmm.

    Made a new batch of the Liviva Konjac spaghetti with extra lean ground chx, and lots of diced veggies. Half a jar of Classico pasta sauce
    was conveniently leftover in the fridge. Turned this mixture into 3 ample servings.
