    Decided to have Dumplings tonight, I think deep-down it is because I am craving take-out and this feels like a take-out meal.

    We will have both Chicken and Beef Dumplings (I buy the huge bags from Costco when they go on sale) and we will make homemade Chicken Fried Rice on the side. I will also have some cucumbers in Rice Wine Vinegar.

    Making a pot of beef stew. Managed to pick up .326 kg of stewing beef for $3.00 on markdown!

    i made tomato soup for the first time after seeing posts about it on FB
    roughly chopped roma tomatoes, some yellow and red bell peppers, garlic, onion, oil, salt and pepper. Everything on a lined baking sheet then into the oven.
    in a pot i added some chicken soup, baby carrots and club house italian seasonings.
    once the roasted vegs are done i transferred them into the pot with the carrot and chicken broth. Then i used a hand held immersion blender to blend everything up. I just eye balled all the ingredients and seasoned to my taste.
    topped the soup with some croutons
    it was yummy

    October 1 means I am back on my plan to eat healthy....because 'beach food' set me back this summer.

    Tonight is homemade butterbut squash soup (that I made yesterday), Jamaican jerk boneless/skinless chicken breast, and steamed mixed vegetables.

    @Purdee your soup sounded so delicious! Roasting the veg is a must for flavour. Mmmm.
    The guys have simple ( canned ! Blecht! ) soup and a bun today for work. This was their choice.
    I made a very flavourful warm pasta salad this morning. Boiled up fusilli and penne, added sauteed garlic,
    diced white and green onion, stop light peppers, celery and grated carrot.
    Added S & P, Cool Runnings seasoning , everything Bagel seasoning from Trader Joe's, dried basil and little
    bit of dried crushed chili flakes. EVOO and Apple cider vinegar to dress. Last minute added a small sprinkle
    of white sugar to cut the vinegar taste.
    Will cook up burgers tonight and that will be their work meal for Wednesday. Way better than canned soup.

    The guys are taking the last of the burgers and pasta salad in for work today, not sure what they will crave for Friday's meal? I've been on a strange perogy kick. Ate them for both lunch and dinner one day. Our furnace got turned on last night for the first time! ( brand new furnace ). Good thing DH told me what the burning smell was as I was freaking out.
    It really stunk too!

    I am off the hook for Friday's work meal! The guys are buying Mary Browns on the way in. I have 2 lg trays of burger thawing to make 2 different things.
    The first is a Mexican Taco Meatloaf and the other is a Hamburger Green Bean Casserole. Both total comfort dishes for the weekend.

    recipes for both in case anyone is craving a comfort dish

    Mexican Taco Meatloaf


    Ingredients


    1.5 lb. gr. beef & pork., 3/4 c. salsa, 1.5 c. nacho chips finely crushed.
    1 pkg. Taco seasoning, 1 c. fine diced onions, 1 tblsp garlic powder,
    2 tsp cumin, 2 lg eggs, beaten, 1/2 c. Taco sauce, 2 1/2 c. grated cheese.
    Extra grated cheese for topping. ( optional )


    Instructions


    Preheat oven to 350. Coat whichever pan you have decided on with spray.
    Set aside. In a large bowl, combine meat, with ALL other ingredients.
    Mix well with hands until well combined.


    OPTION 1 ( Pan choice )


    Press 1/2 the mixture onto prepared cookie sheet type pan. Shape into loaf.
    Gently place and press enough shredded cheese to cover the meatloaf into the
    middle of the meat mixture. Leave a 1 inch border around the edges. Top with
    the other 1/2 of remaining meatloaf mixture. Press to seal edges.


    OPTION 2 ( bread loaf style pan )
    Press 1/2 mixture into prepared loaf style pan. Place cheese on top and add the
    remaining 1/2 of meat mixture.


    FINISHING IT OFF


    Brush Taco sauce over the top of the loaf. Place in the oven and bake for 60 minutes.
    Remove loaf from oven and brush more Taco sauce on top of the loaf.
    Add extra shredded cheese, as much or as little as you like.
    Return meatloaf to oven and bake for another 5 minutes. Check for a centre meat
    temp. of 160 degrees. Rest loaf for about 10 min. Slice and serve with a dollop of sour cream.

    Going to make Beef Stroganoff over Egg Noodles and some sort of veggie.

    Only fresh option is Zucchini (the stroganoff will have mushrooms in it) so will pull something out of the freezer, I have broccoli, carrots and cauliflower in the freezer.
