Last night I made tacos. Shredded extra firm tofu seared in a purée of red onion, Russian garlic and chipotle in adobo sauce with black beans and fresh jubilee corn off the cob with avocado.
No clue for tonight…..

It will be a wonderful gathering of 8 of us tonight at Jack Astor's ! An opportunity for the 4 of us to visit with my 2 adult nieces and their parents. We are calling it an end to summer celebration... any reason to make a few toasts!

I am trying to get more creative with our meals as Mom says all we eat are the same things and she is probably right because come dinner time I have no ambition.
Last night I remember we might have chicken souvlaki in the freezer (we did and we need to get back to pre marinating our meats), so I ran to the store for some tzatziki (normally I make my own but this was a last minute decision) and we made wraps with lettuce, cucumbers (for me), tomato, and feta and some oven fries on the side.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Hubs just made a quiche and I am making oatmeal pancakes so we should be good for a few meals. Keeping it simple and trying to use up milk that expires in a few days.

Since it is a cooler day, it is giving me fall vibes I am making a Beef Roast, with Mashed Potatoes and Gravy.
I do not have any fresh veggies to use so I will pull some veggies from the freezer, I am thinking maybe some baby carrots but we will see how I feel later, some days it is just the first bag I pull out so we shall see.
Also, I decided to try to make a small batch French Bread, what can I say I was scrolling Pinterest and saw bread and was all in so if we want we can have a slice or two on the side.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I showed beef/steak restraint while at Jack Astors and had the Cajun salmon
so tonight we enjoyed the beef kabobs that I had snagged on discount at NF. $7.00 for the 3 of them.
I had marinated them in lemon juice overnight which helped with the tenderizing. Sides were steamed rice,
green beans and pork 'n beans....and wine!

It'll be spaghetti with meat sauce for days here, with lots of added bell peppers, mushrooms and onion. Used a 900 gr. bag of dry pasta, 3 lbs total of lean ground pork and lean ground beef. 4 jars of sauce.

Homemade bread(hubs) and soup(me). A high of 11 today so fall has definitely arrived.

making the guys Shake 'n Bake pork loin pieces for Friday's work meal. Steamed broccoli as their side. Spaghetti and meat sauce reached the limit for them after the 3rd -4th feed of it....lol. Their own fault, don't eat some at home after you've taken it in for a work meal?? men are weird...ha ha

Today I am making Lancashire Hotpot for the first time-it is basically a lamb stew cooked in the oven and hails from the same area of England as I do.

Late breakfast meant a late dinner. We just finished. Sirloin burgers, with sauteed onions and mushrooms. New potatoes boiled/buttered. Cooked carrots. Simple and really hit the spot!

It will probably be a semi late dinner tonight as I've set out plates of cooked bacon, sliced tomato and tore up crispy iceberg lettuce about an hour ago for anyone wanting to
make themselves a BLT. Don't forget the mayo! lol. Tonight it will be T-bones on the charcoal BBQ! The steaks are marinating in black pepper corns and lemon juice atm.
I've already oven roasted up slices of butternut squash and par-baked foil wrapped potatoes. There may be some steamed broccoli as well, depends on how hungry everyone is.
The spuds can just get made extra soft on the BBQ near the end of the steaks finishing. Can't wait!

Hubby whipped up some homemade noodles this morning and then made some type of chicken, noodle and veggie casserole. He ate some for lunch and said he loved it. So I guess that will be my dinner.
