Our fridge is clean and pretty bare but we have full freezer.
I cook up some ground beef this morning thinking quick nachos or pasta. I have no plan!

Craving some Alfredo but we do not have Alfredo Sauce so instead I am going to make Dump and Go Instant Pot Alfredo. I will add Chicken, Mushrooms and Broccoli which will add some veggies and use up the Broccoli I have in the fridge.

Picked up a cheese pizza from a local pizzeria "Carlos" and took it to sons and we shared the pizza with his family 2 slices left over asked son if he wanted them for work -no give them to dad for leftovers in the airfryer.

Today was one of those days, a million things on the go at work, none of them planned and I had no plan for dinner so decided to keep it simple with Naan Pizzas since we just made Homemade Garlic Sauce on the weekend we will use instead of pizza sauce.
I am thinking I will keep my vegetarian and just got Mushroom and Onion but we will see.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Since that 401 Hwy crash on Friday with the tanker truck mucked up work travel for the guys, DH will be making his Chx Parm and pasta on Sunday.
Today I made a large batch of white sauce, dumped in 1/2 bag of frozen Sweetlet peas and 2/3 of a Schneiders ham all diced up. We'll have that over
smashed potatoes. Totally a comfort meal!

Tried a new dish tonight Chinese Chicken & Mushrooms (I think it is Panda Express Copycat) it was pretty good, served it over rice. I would make it again.

Mom is not feeling well so had to come up with plan B for dinner since she was just having soup.
We had some Taco Meat and Rice in the Fridge so I made myself a Burrito Bowl, normally I would use Chicken but it was getting late so I did Taco Meat with Sauteed Onions, Peppers and Mushrooms, a couple scoops of rice, a ton of lettuce, some tomatoes, cheddar with Sour Cream and Salsa. I try to use as many veggies as possible but I do like that little bit of rice as I find it helps me stay full.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

@SassyAshley hope your Mom feels better asap. Our DS caught something nasty late Thursday/early Friday. Still not sure what? Sore throat, weakness, lethargy. Sleep was the best option for him and hydration. So we've postponed the whole chx Parm/meat sauce pasta dinner plan until Monday.
Out of the blue our neighbours gifted us 3 incredible boxes that were served at some event they were at. Wow! talk about perfect timing. Like having a personalized charcuterie board in a box! Meats, cheese, both fresh and dried fruits and crackers.
So that's our dinner tonight...lol

Tonight's the night! DH has the pasta with meat sauce all made up. The sknl bnl chx breasts were all " shake and bake " coated, par baked and now he's topping them with sauce and 2 cheeses ( Mozz and Parm ) . I was put on grating duty for those. Dare we open a bottle of wine AGAIN? ha ha It's been a few days now, but who's counting? I felt a Caesar salad would be too much food on the table so we nixed that idea fast. It's an early dinner!!

Mom still isn't feeling the best and my stomach, I don't feel sick but I feel weird (could just be me being a hypochondriac) so we decided on something easy on the stomach for dinner going to make Chicken in Mushroom Gravy over Mashed Potatoes as we both said Mashed Potatoes sounded good.

Since my guys are on an unpaid vacation this week ( Railway Strike affects many other jobs! ) I look at the bright side that the 3 of us get to enjoy full days together. For instance yesterday afternoon while at Metro for " just the milk " that was on sale, DH spied a tray of Vol Au Vent pastries, shot me puppy dog eyes and by 7 p.m. we were sitting down to some of these!
Mmmm, they are really delicious when the white sauce is made from scratch. We also had a small salad on the table that had strips of cooked chx brst, sliced apples, grapes, red pepper, crispy onion salad thingys, grated fresh Parmesan and croutons among the romaine. Since a bottled Caesar dressing was used we classified this as a Caesar....ha ha
