I went to the public harvest this afternoon and I stopped to the fish store to purchase that is new to me salmon cakes,poke bowl smoked salmon, and arranccini with shrimps and corn inside soooo goooood.I am craving the arrancccini with aioli sauce so that is what I eate. the other 2 things are bb january 11
2023: I want to open my mind and try new food

Tonight I will be making a Beef Roast with Mashed Potatoes, Gravy and a vegetable. Not sure on the vegetable yet but we have options, just need to pick one.

It was a clean out the fridge of odd and ends last night so I made a sundried tomato and spinach just egg scramble, garlic and Daiya cheese crescent rolls with Silver Hills WW toast and the last of the salad. Weird but it worked.

Tonight it is rather simple. Heating up 2 small hams ( those precooked numbers ), will have with boxed Herb and butter mashed, roasted cauliflower and corn on the cob. I did buy a fresh pineapple today but I might just open a small can instead of slices to serve with the ham. The corn was on the reduced rack at WM. 4 cobs for 2 bucks! all shucked and cleaned for me.
Making extra of the meat so the guys can then make up their work meals for Monday from the leftovers. Gotta think ahead always.

Last night we made Egg Roll in a Bowl.
I love this dish but it is a bit labour-intensive to cut everything up. I pre-prepped all of the veggies except the mushrooms (I know some do pre-cut mushrooms and stores sell them pre-sliced but I do not pre-prepping my mushrooms) so all I had to do last night was cut the mushrooms, make the sauce and cook the Rice (I could have pre-prepped the rice but, I didn't) it made it so easy.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Tonight is a choice. Leftover pasta (I just made fresh pasta to go with the sauce from the other night)
Or Steak strips with veggies and a baked potato if wanted. (cooking up the steak now so dinner will be easy)

Last night DS ordered and paid for 3 x 1/4 chicken dinners, so Swiss Chalet won out yet again. DH and I should NOT have indulged but .....drool, once it was here who can resist?

I cooked up a box of frozen sirloin burgers thinking the guys will LOVE these for work....ha ha NOPE! They are taking DH's beef barley soup again. Guess they are in a soup mood.
Friday they can eat the burgers, but tonight I'll be Shake 'n Baking some lovely thick pork chops. Will probably have those on Saturday with my favourite veg...bright green steamed green beans, FB had the bags of them on sale for $2.98

Tonight we are having one of my favourites. Balsamic Chicken & Mushrooms over Mashed Potatoes.
I am a sucker for anything Balsamic and I love this dish so much.

Last night was not a good night, totally did not have a plan for dinner plus had lunch late so not really hungry.
Around 6, I pulled a pack of Salsa Chicken from the Freezer, sauteed some Mushrooms, Onions & Peppers and made a Taco Bake using Tortillas and Cheddar.

Last night I went casserole crazy! Made 2 new ones ( new to me ) Both in 9 x 13 ceramic dishes.
First one listed as a One Pan Cheesy Root Veggie casserole and the 2nd was Baked Spaghetti .
Reason: I had 1 very large sweet potato and 3 beets left in my cold room from Christmas, so I added the last 2 carrots from the crisper and 3 apples ( that clearly had not
been doing their moisturizing regime )...... wrinkled! When the recipe says " cheesy " they mean it. Both turned out so delicious, can be side dishes OR main meal.
Comfort food won out again.
