DS generously sprung for 3 Festive Swiss Chalet chx meals, perogies, extra sweet potato fries and spring rolls......so how could I hurt his feelings by declining?
Mmm, those Lindor chocolates were the best part.
DS had a 1/2 chx meal, DH and I both got 1/4 white meat., but as usual half of mine is in fridge, along with that dinner roll which I'll have for lunch today.
I used to be able to finish a full meal of theirs easily in the past....not sure why I feel full so fast now?

I pulled out Pork Chops.

Those Swiss Chalet leftovers sure hit the brunch spot! Now I'm very tempted to make up liver and onions for my ( late ) dinner tonight since finding a tray of thin sliced beef liver on at 40% off at FB early this morning. I just don't want to freeze the slices, but that BB date is looming so liver it is tonight! I had a meal of that recently but never tire of it.
The guys are working off the cooked stuff already in the fridge, not my problem they don't like liver....ha ha ha

Well, change in plans, Mom had Peameal for Breakfast so to not have pork twice in one day we will have Pork Chops tomorrow.

Tonight will be the Bake Pork Chops in Creamy Dijon Sauce with Mashed Potatoes but we ate all the Squash last night so I will have to choose a different veggie. No worries my freezer of full of veggies, thinking maybe Brussel Sprouts.

Tonight dinner will be mijoted pork tenderlion in a 3 peppers sauce,with a lots of veggies and mashed patatoes,currently on the stove in a Creuset pot.
The goal is to live day by day not to much thinking hahaha !!!!
I love to save money!!! Frugal life hahaah !!!

Last night I made chicken quesidias with sliced cucumbers and fresh pineapple on the side. Sometimes having no plan and just seeing what you have to use up makes a meal My kid loved it so it was a hit!

The guys are taking in chili today for work but tomorrow they will enjoy the last of my homemade beef filled ravioli ( and I added a 2 pack of sausage tortellini ) mixed in sweetlet green peas, chopped cooked chicken all into a homemade white sauce that had both Havarti and grated Parm melted into it. Lucky buggers!

Tonight I am making what some now refer to as Adult Mac & Cheese which is a French Onion Pasta Bake.
Little sad there is no salad to go with it, I look at other options at the store, and probably should have grabbed something but I am just not a fan of the mixed greens. I like basic Romaine I can turn into my own salad, they did have Iceberg on sale but it didn't look so good.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Not sure what is up today, maybe the weather but I am super tired tonight so going to keep it simple but not get take-out and have Homemade Burgers pulled from the freezer and oven Fries with Gravy.

Needed to clean up some of the veggies in the Fridge so made Eggroll in a Bowl for dinner.

Decided on a Mexican Feast tonight.
I am going to make Mini Baked Tacos and normally I would serve them with a nice Salad but lettuce prices are insane so no Salad in this house right now.

What type of tortilla do you use for mini tacos? I’m hosting game night this week and want to do a taco bar, chicken, shrimp and beef. It would be better to make small tacos so people can have a variety. I hear you about lettuce😳 we’ve been using cabbage and saving lettuce for Caesar salads.
