We'll be enjoying a bowl of homemade Borscht along with a serving of steak and mushroom pie. Made the stew separate, baked the sheets of Puff Pastry separate too, nice and crisp, then layered them with stew. Baseball and hockey will be our dessert!

I grabbed a package of ground beef as we needed to make more burgers for the freezer. Since Mom made those today and I got called into a branch to cover, we are just going to have Burgers with Oven Fries for Dinner.

No serious cooking by me for 6 weeks, that is anything involving a heavy lift of ingredients. I'm taking my hernia recovery serious, no lifting anything nearing 10 pounds, 5 pounds to be safer. That means pretty much everything...... AP flour, spuds, fall gourds, squashes, meats taken from downstairs freezer to upstairs.
That being said, last night DH grabbed 2 of WM's roasted chx's and a box of their Samosas to " tide them over " ha ha ha
There is still borscht soup and a steak stew mixture in the fridge, but he panicked....lol.

Tonight I will be making Caprese Chicken Spaghetti Squash Bowls, love this recipe, it takes a little bit of time to make but most of the work is in the oven and there is almost no cleanup.
It is a Spaghetti Squash with Chicken, Tomatoes, Basil, Mozzarella Cheese with Balsamic Glaze.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Tonight Mom is having BBQ Chicken Wings, normally I would have BBQ Chicken Caesar Wraps but when I went shopping there was no Romaine.
So Instead I will just have a BBQ Chicken Breast and we will both have Roasted Potatoes, Lemon Roasted Asparagus and I might also make some Roasted Garlic Parm Butternut Squash.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Seems everyone is doing their own thing Saturday. I finally got my craving for sauteed liver and onions satisfied by making a batch up myself. Mmmmm.
DH went the sandwich route and DS fell victim to his once in a blue moon Cereal binge! I think he mixed 4 different cereal varieties into a big bowl and dumped a ton of milk over them.
Gosh, who knows what Sunday will bring?

I forgot to take out the roast beef again yesterday....so tonight I am thinking a quick meat pasta. I have ground beef cooked and ready to add to sauce in the freezer. We also have leftover chicken, rice and brussel sprouts from last night.

Decisions were made today. Finally able to get 2 corned beef roasts ( to go with the cabbage I bought a week ago ) so one meal on the weekend is going to be corned beef and boiled cabbage. ( one of DH fav's, sweet memories of his Mom ) also soaking a bowl of dried beans for chili, but that won't get made until Saturday evening or Sunday morning.
I cooked up 8 beef burgers for the guys Thursday night, some of those are for work meals.
Today's grocery shopping was rewarding, used $50.00 in points at NF and $60.00 in AM at Metro. The car wash I did after made everything feel better, the sun was out by that time!
