Mom is making a batch of her Homemade Sweet Baby Rays BBQ sauce and since I have lettuce again (Christmas treat to myself 2-pack for $3.99 at No Frills) we are going to have BBQ Chicken with Cesar Salad and probably oven fries on the side.

After working yesterday I made garlic smashed potatoes since I needed to use up the last of the 10lb bag I had. I added some marinated and seared soy curls to the leftover stew and topped the smashed taters with it. So good!
* soy curls are a staple in our house. They take the place of chicken or even beef shreds and are an excellent source of protein and also iron and a bit of fibre.

Tonight we had Steak with mushrooms and onions, perogies and green beans.
DS said he was very happy with dinner. Told him to remember that tomorrow when he is eating a turkey sandwich for dinner (Travel Day!!! I'm packing food so we won't starve or eat crap!)

Tonight will be a night of appetizers, we will have:
Shrimp with Cocktail Sauce
Brie with Peach Jam & Crackers
Spring Rolls with Plum Sauce
4-Cheese Spinach Dip with Pita Chips (Although mine is 3-Cheese as I was not buying Romano for 1 TBSP)
Air Fryer Fried Pickles with Ranch Dip
Loaded Baked Potato Bites with Sour Cream
Mozzarella Stick with Marinara Sauce
Pizza Rolls with Marinara Sauce

mouth watering " pizza's " @harbie
I did a shameful thing yesterday. At Metro I bought 3 separate boxes of frozen appetizer's. DS fav. ( Torpedo style Tempura batter shrimp ) the elusive never to be found sausage rolls and 1 box of chicken spring rolls. I KNOW!!
Even though I swore not to succumb to store bought appetizer's because my homemade ones are actually better, meh? I got a lazy twitch and wanted to have something in the oven
to ring in the New Year with. At least I was able to use Air Miles to pay for them.

Tonight will be a bit of a clean-out-the-fridge kind of night.
We have some Chicken Breasts I got at Costco to break down and package for the freezer so we will have Baked Chicken Breast with Leftover Loaded Baked Potatoes Bites (Shredded Potatoes with all your favourite baked potato toppings cooked in a muffin pan) and Roasted Butternut Squash because it is cut up in the fridge and needs to be used up. This afternoon will be our snacking platter that most did last night. I'm making a charcuterie board for dh and I as well as my parents and we will snack. Most likely won't be hungry for dinner as we are snacking later this afternoon.

Definitely. It’s carrots! I know it sounds weird but they can be so realistic and delicious. I use a local brand https://livingtreefoods.ca/ . They are by far the best I’ve tasted but these guys are pretty good too https://www.savedasea.com/. The last company also makes a “tuna” that when I add a bit more vegan mayo, chopped dill pickles and pepper it makes a delicious tuna salad sandwich!

Tonight will be Chicken Caprese Spaghetti Squash Bowls.
I have two Spaghetti Squash to use up, we will only use one tonight as we each take half, plus they are the massive ones from Costco. As well I have some Grape Tomatoes to use up so win, win.
