It was a long day of prep (remind me never to buy 9 heads of lettuce again, so much work) so I kept it simple for Dinner was Taco Bowls, using Rice, Salsa Chicken, Sauteed Peppers and Mushroom, tomatoes, Lettuce, cheddar, Sour Cream and Salsa, so good and so filling and full of veggies.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

My head feels like a massive storm is about to blow in but no rain as far as the eye can see for my area but somehow that is not changing how my head feels so keeping it sort of simple.

Made a dozen snkl/bnl chx thighs in the air fryer. Herbed coated them in 2 different batches of 6. Boiled up new potatoes, opened a can of peaches & cream corn and pork 'n beans. This was the easiest dinner I have made......lol.

For the weekend I have a few tricks up my sleeve. Bought the 2.5 lb. bag of green peppers at NF for $4.00 ( naturally imperfect? ), then scored some 30% off steak slices, so that will become a beef and pepper stir fry. GT had the 800g fully cooked hams on for $7.97 and whole pineapples from NF for $2.99. Will be slicing both items into thick pieces for the BBQ. Will be making cooked carrots or boiled new potatoes as sides for both meals. The 5 lb. bag of NN carrots was only $3.00 ! I kind of enjoy the challenge at times buying all the sale stuff and creating a delicious meal. My guys suffered a very tough work week, so this weekend I need them to both just chill the F out! lol

it's soup time. In a large pot of water at a rolling boil, I tossed in 9 sknl/bnl chx thighs, 2 large turkey necks ( freezer leftover from ?? ),
2 humungous Bay leaves ( each one was 5" long ), dried parsley, dill and Black pepper. Let it go for about 30 minutes.
Placed an entire block of frozen spinach in, added 2 cartons chx broth, continued to boil for 15 more minutes.
Added the diced veg in a particular order, starting with onions, parsnips, carrots and celery leaves......simmered for 20 min, then added the diced celery, cauliflower florets and sweet potato. Last slow simmer for 20 minutes. Removed all the meat chunks and diced them up smaller.

I just whipped up a pan of corn beef hash. I remember my Grandma telling me that during the war and rationing she used to have 4 oz of meat to make hash for the 5 of them! No wonder my Mum is only 5 feet tall-mind you she is 92 so she obviously got some good genes. I used most of a 12 oz can-it will serve several meals but definitely more flavourful than what my granny could make.

lol!!! @lizzie bargain , I love the reference to your Mom's size. My Mom was the same, started out life at 5'1" and passed at 94 around 5' tall. These women knew how to stretch the food to make do for the family . No waste allowed at the dinner table in our home. My DH and kids love CB hash here. I inherited my Dad's long double sized cast iron pan, it covers 2 stovetop elements. He used to have that pan filled with corned beef hash fairly often, one of our go to meals. Enjoy yours!

Made a triple white sauce recipe, ( grated Parm and extra old cheddar into it ) set it aside. Sauteed sliced and diced veg. Carrots, onions, celery, stop light bell peppers and mushrooms. Sauteed the diced ham in a separate pan, splashed some red wine over it. Tossed everything into the white sauce. The guys will take in a dish each to nuke at work and pour over Puff Pastry cut outs.

This week ended up being busier than expected and I spent ALL week in the plant which I did not plan but we still did well:
Monday: Baked Sausage with Savoury Roasted Sweet Potatoes & Brussel Sprouts.
Tuesday: Chicken Parm Pasta with Mushrooms, Zucchini and Peppers with Garlic Bread.
Wednesday: Mom had Wings, I had BBQ Chicken Caesar Wraps and we both had Oven Fries
Thursday; Chicken Souvlaki Bowls with Rice, Lettuce, Tomatoes, Cucumbers, Tzatziki and Feta
Friday: Nacos (this was the night we struggled, I had only planned to go in for a couple hours do some things my trainee could not do and leave but I stayed until close because the manager was in our other plant but I had no plan for dinner).
Tonight is a mystery so far.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

what menus! ^^ Something will turn up for your dinner today @SassyAshley . Poor DH is as sick as a dog. He now realizes where he caught this very nasty cold virus, last Sunday at the union meeting, shaking hands with all guys he hasn't seen in years! Meals this weekend will be gentle, maybe just a soup for him.
