Last night was BBQ Chicken Caesar Wraps with Air Fryer Fries so I would have leftover Chicken to bring in my lunch today as I got called in to cover a manager.

I thought the pasta bake was really good-I call it "grown up" mac and cheese. It appears to make 8 very generous servings-so hubby and I will be eating it for a few meals. Thanks SA for the original idea.

Tonight we are having Highliner Pan Sear Wild caught Sole. 2 Fillet Pack. I had the $4.00 off coupon so it was a good deal. Making Mashed potatoes and vegies with that and salad.

I am plum out of ideas for dinner. Good thing there are still leftovers in the fridge. Plus DH had a hankering for some luncheon meat. We now have bologna, corned beef, oven rstd. turkey, and kielbasa chubs...and they go so well on fresh submarine style buns.
I suspect he is going to be sandwiching well into the weekend.
Gosh, Thursday already! happy Thirsty Thursday all!!

I am super tired and was covering a Manager today so off the meal plan, I need simple and easy so Nachos with Melted Cheese, Homemade Taco Meat and toppings of choice are now on the menu.

Salmon pot pie with homemade chow chow ketchup, macaroni salad dessert of ours choices hahaha!!!!

Its super warm here today and we have Hurricane Larry barreling towards us expected to hit later tonight. I had the brainy idea of cooking a large beef roast so that there will be leftovers for sandwiches, etc in case we lose the power. it is extremely warm in my house right now, I have all the windows and doors open to let in the breeze (its super windy) but its not helping!!!! Cold Blue Mountains in my future

I admire the way you plan ahead and brace for impact @KelJo .....Roast beef dinner and sammies for later? perfect.
This morning my brain finally kicked in and I made a veggie loaded beef steak strip stir fry.
The rice is just finishing in the rice cooker.
I used blade steak that I sliced into thin strips, coated in seasoned flour, sauteed in sesame and regular oil.
Veggies were chunky cuts of 3 colours of bell peppers, slanted cut celery, green onion and carrots, mushroom chunks sauteed crispy, and broccoli florets.
All in the wok according to their cooking times, added fish sauce, soya sauce and rice wine vinegar for some flavours.
