Yesterday I cooked a pork roast, mashed potatoes, stuffing, carrots, mashed turnip, green peas, gravy, etc, it was good...but it was even better today leftover after a day of hiking & berry picking

Big sincere thanks to @SassyAshley , after I looked up what French Onion pasta bake was I just had to dive in.
We made this version....

but I replaced the Gorgonzola and Gruyere cheeses with freshly grated Parmesan, extra old white cheddar and Mozzarella.
This recipe was so flavourful probably because of the time spent caramelizing the onions in the wine, then the full 2 cups of sliced mushrooms!
Just delicious.

@walkonby this is the recipe we use too but we also use Parm and either Mozzarella or Provolone, it is so good

Tonight is Caribbean fare. Jerk chicken with rice & peas and coleslaw. Ginger beer to go with that. Yum!

Tonight- BLSL chicken breast, rice, broccoli, corn on the cob and salad. Pick what you want and eat!
Tomorrow night- Roast beef, mashed potatoes, gravy and veggies.

Decided to make Homemade Pizza tonight, it has been awhile since we could make Homemade Pizza due to the hot weather.
The usual suspects will be making an appearance: Pepperoni, Mushrooms, Onions, Bacon, Cheddar and Parm
Will also make a Salad on the side, probably Caesar, I am on a bit of a Caesar binge right now2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

So weird that very late....... like at 3 a.m. I decided we needed another batch of that French Onion Pasta bake, insuring the remaining gorgeous white mushrooms in the fridge didn't spoil. Also used up the last of the bottle of red wine, coconut milk is now on my grocery list after using the last can.
This time I kicked up the cayenne pepper from 1/4 tsp to just over, but not as much as a 1/2 tsp....DS felt the need to tell me that I had increased it by 50% ! What?? Stop using math to hurt me.
Anyhow, this batch was even yummier ( we all had a small bowl of it hot out the oven ) and we all agreed the additional cayenne was worth it!

A cold cut Subway sandwich because I was in a hurry to go pick up my new cat Stella!!!!
Had dinner at 8:30 pm ......lol.......
The goal is to live day by day not to much thinking hahaha !!!!
