What's For Dinner?

I made veggie ground round a sweet potato burritos with a huge salad .

I do not know what it is but we keep having a late lunch which is really messing with Dinner because we aren't hungry and then we end up eating super late. Today is no different so before I knew it, it was 5:30 with no plan for dinner so gotta keep it simple.

We are having Pasta with Meat Sauce, usingthe Classico Roasted Portobello Sauce as you do not need to add anything to it in our opinion.

Mixed the leftover Mexican ground round/sweet potato mixture with the mac and "cheese" for a texmex vibe.

DH is Sunday " chicken souping " again. We have NO celery! I offered spiralized daikon, extra carrots, celery seed, chx gravy, parsley, leftover corn niblets...he was fine with all of it.
He's Shake 'n Baking half the thighs. Mmmm, I'm doing NOTHING! ha ha

Tonight I am making Dutch Oven Chicken and Vegetables, it is Chicken with Carrots & Mushrooms in a Creamy Gravy, we will serve it over Mashed Potatoes.

Ordering Panago tonight for Giving Tuesday. Ordering a plant based pizza for $15 and $1 goes to https://www.happyherd.org/ farm sanctuary. It’s only in BC I believe.

Last night we made Homemade Pizza with Caesar Salad.

I took a litle nap between work and starting dinner so needed to keep it simple. Decided to go with Baked Potato Soup.

Last night I made 2 options for the guys ( their work meals) Corned Beef Hash OR spinach and cheese ravioli with sauteed red onions covered with spicy pepper Classico sauce.
They are taking the pasta in today.

Last night I made Baked Chicken Sandwiches, a Chicken Breast sliced in half to make it thinner, seasoned with Garlic, Onion, Salt, Pepper & Paprika baked in the oven and on Sausage Rolls as my No Frills only had the little Wonder Bread Hamburger buns with Mayo, Pickles, Lettuce and Mom wanted Cheese.

I also make some oven fries to go with it.

DH's beef barley soup is finishing on the stovetop at a low simmer. I've got the chicken wings going in the air fryer, 1 layer at a time. The parts of a small batch of potato salad are still chilling in the fridge, waiting to be tossed together with mayo. Medium diced, ( peeled ) parboiled russets, boiled eggs, diced celery, green onion, shredded carrot and daikon.
Dare we open up a bottle of wine with this meal? ha ha It sure isn't a fancy dinner but we'll pretend it is!
