    tonight we'll be doing fresh cod. At Metro I used my AM to score a huge slab. Some I am cutting into chunks to batter ( tempura style ) and deep fry, what's left I may just lightly pan fry. We're doing the Mexican spicy corn on the cob on the BBQ as a side ( Metro reduced rack $2.00 for 9 medium cobs all peeled! ), and having ( GASP! ) Betty Crocker instant mashed. That 10 lb. bag of $1.00 potatoes I bought from WM has about 8 left but they require peeling and who wants to do that? ha ha
    Dessert? OMG, against my best instincts I bought a Metro cake. Cheesecake with a ton of fresh fruit on top. It was " on sale " which we all know is a joke, but I decided $23.00 was worth it for the 3 of us to share some and then take some down to DS#1 on Saturday!

    A large baking tray in the oven with sliced smoked sausages from Costco, zucchini ($0.88/lb from H&W produce), and onions. We'll have some leftover steamed rice to go with the roasted stuffs.

    A pot of smoked sausage, rice, pinto beans and tomatoes-hopefully it tastes good.

    DH and I shared a silly Metro hot meal combo from Metro this afternoon. I participated in the redeem promo that ends Monday, earned 30 AM for using 95 AM for the wings and wedges, we ate some of them in the parking lot before getting over to FB. Yummo! Now I've no interest in making dinner. Maybe later.

    Last night was a cauli crumble and sweet potato burrito with a side of mini cucumber and tomato salad with a balsamic dressing. Easy, delicious and used up some odds and ends

    BLSL chicken breasts with asparagus/mushrooms and tater tots/sweet potato fries if desired.

    Was suppose to be Steak on BBQ but I have a chill and not feeling like bbqing. Hopefully someone else can bbq tomorrow night

    Sunday's dinner was a joint effort. I tenderized the 3 steaks and prepped the asparagus. I peeled and cut the veggies for DH favourite Beef barley soup.
    He roasted some carrots in the oven, pan fried red pepper strips, onions and mushrooms to go on the steak. We wanted Pot Stickers for our dinner carb.
    The soup was made for their work meals this week. I BBQ'd the steaks and he pan-fried/then steamed the Pot stickers as well as the asparagus.
    Way too much steak, so DH put DS's aside, then made up 2 full work meals with steak and the leftover sides.
    He's really starting to appreciate the simplicity of making more than enough of something once, then having the leftovers for their work meals.
    This will all be second nature to both guys when I'll be bedridden after surgery. However, I do fret over what my kitchen will look like once I'm eventually
    able climb stairs. ha ha

    We had a late lunch around 4:00 so it was considered lunch and dinner. I made loaded hoagie sandwiches. Guac, romaine, pickles, hot peppers for Dh, homemade ranch, seared sweet chilli tofu strips, and homemade ranch dressing. Dessert was a slice of banana bread.

    our plan is to have leftover ham and cheese sandwiches but my hubby reminded me that today is thursday and kids eat free at iHop. We're going to let our kids decide LOL

    the only other restaurant chain that I know offer free kid's meal for kid when you purchase an adult meal is Denny's on tuesdays. Do you know of other restaurants in Canada that offer similar deal?

    I spread ricotta cheese over 4 squares of soft naan bread and topped with sliced mango! A strong coffee as an accompaniment. Mmmm

    The guys will BBQ up some of the Belmont Burgers from GT for themselves later tonight. I'm just not a true burger girl unless I make my own. These ones seem disgusting to me with CHEESE inside them....hurl. ha ha There's plenty of options to choose from in the fridge, I might just make myself a dinner salad?
