In Victorian times, the pie bird was invented to keep the pie looking picture perfect. This small, hollow porcelain bird is placed in the center of a double-crust fruit pie. The little bird “blows” the steam out of its long beak to prevent the pie from boiling over. It also supports the pasty crust in the center of the pie so that it does not collapse.

You guys are making me want to make a lemon meringue pie. No one in the house eats it so I rarely make it but it's ssssoooo tasty!
