hmm there is this indian dish thing my dad knows how to make
i think there are two variations
one with potatoes and spinach
other with cheese blocks and spinach
i have no idea how its made though
:S
there are recipes online though

Spinach Dip
KNORR SPINACH DIP

1 package (10 oz.) baby spinach, chopped or 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 container (16 oz.) sour cream
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1 package Knorr® Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped (optional)
3 green onions, chopped (optional)

PREPARATION Everyone Loves Our Dip! Here's How We Make It:
Combine all ingredients and chill about 2 hours. Serve with your favorite dippers to your favorite people.
A new serving idea: Hollow out cucumber slices and cherry tomatoes. Fill vegetables with Knorr Spinach Dip and garnish with a sprig of dill.

How about Spanikopita (little puff pastries with spinach & feta cheese - they're really really good)?
My friend's sil makes it. Don't have her recipe (wish I did, I keep forgetting to get it from her), but here's a recipe for it:

Spanakopita (Greek Spinach Pie)
* 3 tablespoons olive oil
* 1 large onion, chopped
* 1 bunch green onions, chopped
* 2 cloves garlic, minced
* 2 pounds spinach, rinsed and chopped
* 1/2 cup chopped fresh parsley
* 2 eggs, lightly beaten
* 1/2 cup ricotta cheese
* 1 cup crumbled feta cheese
* 8 sheets phyllo dough
* 1/4 cup olive oil
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
2. Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
3. In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
4. Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

RAW SPINACH is soooo good for you!!! it feeds your brain and body You made the right decision buying it. And its GOOD FOR YOUR BABY!!!
You can make a spinach salad with the roasted chicken you buy at the store....and we all know that chicken can make several meals from 1 chicken...just cut up some of the chicken breast, toss it with some Olive oil, balsamic vinegar, diced red onions (if u like them), walnuts, (you can add some blocks of feta cheese), and raisons or dried figs or fresh strawberries or instead of the olive oil and vinegar, you can throw over it your favorite dressing!
or if you want to go for a hot spinach dish, after any meat you are stirfrying in a pan, leave the juice in the pan (after you take out the meat and put it to the side) throw the raw spinach in side, cover it for 3 minutes and you have steamed spinach in the sauce you cooked your meat in! and it's sooo good!!
or blend the raw spinach in a mixer with cottage cheese some of the store bought roasted chicken pieces, homogenized milk and give to the baby! very good for her

I only ever eat spinach when my mom makes it in our countries version of Spanikopita funny enough only called Pita haha but ours is not in phylo pastry my moms makes the dough and it also has feta in it.
I guess I am of no help... sorry
The spinach dip idea was good though!

For a fast dish...saute onions, and when translucent, add a copious amount of fresh garlic, then push aside and add the spinach and cook down, stirring in the onion mixture...a very nice and quick side dish...I even sprinkle parmessan over it.

How about quiche?
I buy spinach every week. I like eating it raw or boiled or stir-fried with a bit of oil and garlic. Sometimes I just throw it into whatever food I'm making, like pasta or soups or whatever.
