    Tonight I made vegan crepes for the first time. I stuffed them with a lemon-cashew mixture and whole blueberry sauce. I also made some homemade vegan chorizo sausages which turned out amazing and roasted some blue potatoes on the side. This dish was excellent. I want to serve this to my parents for brunch after thanksgiving so I thought I would test the recipe out now.

    That sounds and looks SOOO YUMMY!!!

    I made homemade pizza tonight, kids all topped their own to their preference, and DH and I loaded ours up with pepperoni, ham, capicolli and Tonnes of veggies...mmmmmm

    vegan chorizo sausages sounds YUM-MY!!! how did you make them i think ill give it a try love making new and different food!

    Well, tonight my taste buds transported me back to my childhood and memories of Sunday dinner at grandma and grandpa Trofanenko's farm. We had:

    ----------------
    Natalka's Lazy Cabbage Rolls Casserole
    (with or without meat)

    1 cup rice (short grain is best, but long is okay)
    2 cups water
    1 teaspoon salt, few shakes pepper
    1 Tablespoon margarine
    ----
    1 medium onion, chopped
    3 Tablespoons margarine
    (option - 1 pound lean ground beef)
    3 cups shredded cabbage
    1 can tomato soup; 1 can water
    salt, pepper, dill

    Cook rice the way you usually do. I nuke mine.
    In a dutch oven, cook onion in margarine til softened. (If using ground beef, add now and cook til pink is gone.)
    Add cabbage, stir around, and keep cooking and mixing maybe five minutes til it wilts a bit.
    Add salt and pepper to taste; I also add several shakes of dill.
    Put this in a 9x13 baking dish, add rice and mix together well. Add a can of tomato soup, and a can of water, and mix all together.
    Cover with foil. Bake 350 degrees about 45 minutes. Uncover, let sit 5 minutes. Mix and serve!

    i think i will be making this sometime next week DH loves meat so ill be making it with ground beef never bought canned soup so which one would be the best for this dish?

    I used good old Campbell's Tomato soup, the 284 ml. can. This was the first time I was making it so I pretty well stuck to the recipe except I did use butter instead of margarine.

    It's so simple and perfect just the way it is.

    Glad you all like the recipe - it is delicious.
    But there is still something to be said for making the actual cabbage 'rolls' - which I'll next make for Thanksgiving.
