So I've always made those little cheesecake cupcakes this way:
I put the Nilla wafer in the bottom of the paper cupcake cup in a muffin pan, then mix together the 2pkg cream cheese, 1/2 - 3/4C sugar, 2 eggs, dash vanilla or almond flavouring, put a generous tbsp into each cup, and bake @ 375 for about 10 minutes. Then I decorate with cherries, or blueberry filling or I bake them with a mandarine orange slice on top....or sometimes I add 1tbsp of lemon juice and 1tbsp or zest to change things up a bit...
However! I just came across this method and it sounds really intriguing...

I want to make a big batch for a block party on Saturday we attend each year,
so I'm wondering how you make yours?
What are your thoughts on this new (to me) recipe?
Or am I going to be the guinea-pig here and try these first? This thread is currently associated with: N/A

One of my coworkers makes cheesecake-filled cupcakes. Just use a cake mix, your choice of flavour, put it into muffin pan, but don't fill the cups up too much. Make a cream cheese mixture like you described up there, put a blob of it into each cupcake. It kind of bakes into the middle, yum!

I know, we need a recipe section!!!
Lynn, seems like the recipe with the chocolate chip cookie dough will be a heavier item. For me, it's not a combo I would like - the ones with the vanilla wafer are light. It would be nice to try it with a chocolate wafer, though!
But then there are Black Bottom Cheesecakes - the ultimate! You can make them mini or regular size cupcakes.
Filling:
1 - 8 oz pkg cream cheese
1/3 cup sugar
1 egg
pinch salt
1/2 tsp vanilla
Cupcakes:
2 1/2 cups flour
1/3 cup baking cocoa, sifted
1/2 tsp salt
1 1/4 cups sugar
1 1/2 tsp soda
1 large egg
1 1/2 cups water
1 1/2 Tbsp vinegar
1/2 cup oil
1 tsp vanilla
Method:
- In small bowl, blend filling ingredients until smooth, with mixer. Set aside.
- In medium bowl, combine dry ingredients.
- In large mixing bowl, beat egg, water, vinegar, oil and vanilla.
- Stir in dry ingredients, until smooth.
- Fill well greased (or lined) cupcake tins, 3/4 full - if using mini size (1/2 full if using large size). This recipe will make about 48 tiny cupcakes.
- Drop a 1/2 tsp of cheese filling in center of each cupcake. (1 tsp for larger size)
- Bake at 350ºF for 15 min ( 20-25 min for larger size)

Natalka, I think you're right about the cookie one being heavier. Since I have only tomorrow to make them (I have two weddings to perform on Saturday before the block party), I'll stick to the old recipe. But yes...the other is intriguing.
Your recipe for the black bottom cupcakes sound just like the ones Zonny posted above...but with a cake mix...does the cheesecake part remain cheesycakey or does it sort of assimilate into the chocolate cake part?
It sounds yummy, though!! Did you see the 'alterations' I posted in reply to her post...
SO many combinations.
SO many calories.

Oh! And ITA.....I thought we had a recipe section but it's the 'what's for dinner' one.
Yes we do need a Recipe Exchange!
Separated into sections:
appetizers
entrees: beef, pork, chicken, seafood
slow-cookers: (see above)
soups/salads
desserts
Too much?

OmG I need to make a trip to Patty Cakes (they make the most delicious cupcakes there. You guys are making me hungry for cupcakes!!!!
I agree we need a recipe section on this bad boy. Often someone posts a great recipe, but it gets lost in the threads/posts.The average dog
is nicer
than the average person.

For the black bottom cupcakes, the cheesecake part stays like cheesecake! It's because the cake batter is from scratch so it's more dense.
A cake mix would be a lot lighter - but I'm willing to try it!
