rose: trying to get buy w/o #4, because too close to bedtime, and i won't know if i'm dreaming/hallucinating, or really killing ppl. so i've settled FOR SCREAMING AT THEM ROTTEN BUGGERS AT THE TOP OF MY F'IN LUNGS.

Anyone have a good banana recipe other than bread? I always have over riped bananas and trying to figure out ways to use them. I am trying to make banana chocolate chip cookies right now in my new toaster/convection oven

Gonna post the recipe here in case anyone else wants it.. I bake it in a 9X13 pan and call it a cake..
Hawaiian Pineapple Banana Bread
INGREDIENTS:
- 3 cups plain flour
- 2 cups sugar
- 1 tsp. baking soda
- 1 tsp. Cinnamon
- ¾ teaspoon salt
- 1 cup chopped nuts (walnuts, pecans or macadamia) ( I use Walnuts)
- 2 tsp. vanilla
- 3 eggs, beaten
- 1 cup vegetable oil
- 2 cups mashed bananas
- 1 (8 oz.) can of crushed pineapple (well drained) (I use a 20 oz can)
- 1 cup shredded coconut (I added this to the recipe)
PREPARATION:
In a large bowl combine flour, sugar, baking soda, and cinnamon, salt; stir in nuts. Set aside.
Combine remaining ingredients in another mixing bowl; blend well. Pour wet ingredients into dry ingredients and stir until just moist. Pour into 2 greased and floured loaf pans or a 9x13 inch cake pan, can be made into cupcakes too. Bake at 350° for approximately 1 hour 30 minutes. Check center of loaf with toothpick and if it comes out clean, its done. Cool 10 minutes before removing from the pan. You can sprinkle powered sugar on top after it is cooled.
