    Yesterday i baked an apple pie that i made a few weeks ago and froze. Turned out great!

    Here is the requested recipe.
    Carrot Muffins

    1 cup raisins
    2 cups warm water
    1 cup white flour
    1 cup whole wheat flour
    1 ½ tsp baking powder

    Gradually fold in the dry ingredients, taking care not to over mix the batter.
    Pour the muffin mixture into lined muffin tins. Makes 18 muffins. Bake for 20-25 min, or until a toothpick inserted into the centre comes out clean.
    Cool in the muffin tin for 5 minutes before turning onto a wire rack to cool.
    Store in an airtight container for up to 5 days.

    Our 3yr old son and I are baking monster cookie bars. I am reducing the m&ms and mini-chocolate chips and including dried cranberries. I haven't tried this specific recipe before.

    Yesterday, confetti cupcakes for my son's birthday, with green lemon-flavoured icing. Yes, he's 24, but he loves that cake and lemon is his fave flavour.

    40 bloody bones...

    shortbread cookies, using a cookie mold sheet... 5 at a time...(bake let fully cool then carefully take out) then iced with red icing my fingers are stained pink

    COFFEE CAKE

    1/4 cup butter
    1 cup white sugar
    2 eggs
    1 1/2 cups flour
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 cup sour cream

    Filling & Topping
    1/2 cup Brown sugar
    1 tsp cinnamon
    crushed walnuts if desired
    Mix together and set aside

    Preheat oven to 350F.

    Mix together butter, white sugar, eggs, flour, baking powder, baking soda and sour cream. Spoon half the batter onto a greased bundt pan. Sprinkle Filling on this and then spoon the rest of the cake mixture on top. Then sprinkle the rest of the filling on top. Bake at 350F for 45 minutes. Enjoy

    Made Nanaimo bars (I know these are no-bake but I consider them baking anyway ) and almond biscotti dipped in white chocolate today. Didn't screw it up, melted chocolate like a pro :D That's always been tough for me, to not scorch it. So I'm proud!

    Going to try and tackle Butter tart bars, pecan pie bars and pumpkin pie bars tomorrow We have a boatload of pumpkin puree from our 5 little garden pumpkins. Anyone have a recipe for pumpkin pie that tastes like costco's? Or tips to get it to taste that way?

    Today: Pumpkin pie squares, butter tart squares with and without raisins, pecan pie squares.

    It was a full day of baking. I even made the crust from scratch and it was amazing.

    Update: Pie tastes close enough to Costco's. http://cookinfood.com/2012/11/12/bet...o-pumpkin-pie/ Used this recipe. Might use slightly less cinnamon next time. Made a double batch so I could use a whole can of sweetened condensed milk (because what the heck do you do with HALF a can?)
