I am so hoping someone can help me with this. My family doesn't like any icing or frosting that I buy from the store. They all want cake from Independent Grocers because that is the only icing they like. I have tried repeatly making different kinds of homemade ones that I found on the internet but none of them even come close.
I end up having to buy 1-2 cakes a month for birthdays and anniversary's and they are so expensive, so if anyone has a recipe they would share with me I would be forever greatful. Thank you.This thread is currently associated with: Cake Beauty, Independent

I don't have an IG in my area so no idea what it tastes like, but wondered if you considered using a stabilized whipped cream frosting. I experimented with this as I was doing an ice cream cake and fruit flan. Dr. Oetker has a "Whip It" product that makes whip cream hold its form even at room temperature and it lasts for a few days in the fridge, still holding its form. I sweetened my frosting with a few teaspoons of icing sugar..I don't like it too sweet. I was so impressed and I know many who don't like regular frostings so this is a nice alternative. I've seen recipes to flavour the frosting with vanilla bean...yummy twist.
Anywho, not sure if that'll help you out but maybe just something you or others reading the thread can consider. Hope you find "the one"!

I don't know what that icing is like, but I know there are a few store bakeries that make great icing for their cakes, not too sweet, and creamy.
I started using this recipe, and it's awesome!
Maybe a bit different to make the first time, but when you do it once, you get used to the method and it's great!
"Best Icing" (from Ukrainian Daughter's Cookbook)
5 Tbsp flour
1 cup milk
1 cup white sugar
1 cup shortening ( I use butter, but margarine is ok)
1 tsp. vanilla
Cook flour and milk til mixture thickens, on med. heat, whisking and stirring constantly. Let cool in pot.
In a bowl, cream together sugar and shortening, add vanilla. Beat this mixture with an electric mixer until fluffy.
Fold in the cooled flour mixture, and beat with mixer til it resembles thick whipped cream, kind of like making butter, lol.
This means WHIP LOTS! (I should time it sometime, I suppose).
(You can add food colouring, too!)
I've made this zillions of times, and get the most compliments about it from everyone!

Another alternative - quick and yummy -
Fluffy Frosting
1 1/2 cups cold milk
1 package Jello instant pudding
1 envelope Dream Whip
Mix together in large bowl, then use electric mixer to beat - slowly at first, then gradually increase speed until peaks form.

Tabby, here's my favorite frosting recipe..it may not be like the one you're looking for, but it is fluffy and so glossy and can be tinted the most delicate color...
Equal parts Marshmallow Cream and prepared frosting!
Whip together until it's as fluffy as you want it...I find that I use a little more marshmallow cream to prepared frosting. It's so shiny and fluffy and make enough to frost and layer 2 9" cake layers with some leftover!
