fo the other ones who didn't loose, loosing weight is not that easy, we must take it one day at a time....so don't blame yourself too much....keep going, soon it will show

I came across this recipe years ago for bourbon chicken. I thought it may be a great one for anyone who wants a treat. This one is not packed with sugar, or calories, a 1 cup serving has only 379 calories. Serve it with some brown or wild rice and some broccoli and you have an amazing meal. I love the spicy taste of bourbon chicken, it's one of my favorites. Ingredients
- 2 pounds chicken breasts; cut into bite-size pieces
1 tablespoon olive oil; (1-2)
1 garlic clove; crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce
1 tablespoon cornstarch; (if thick sauce desired)
DIRECTIONS - Heat oil in a fry pan, add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium heat until well blended and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes uncovered.
Serve over hot rice.
379 calories, 6.7 grams of fat and 21 grams of protien

Hm...looks yummy..of course I'd have to substitute the brown sugar with Splenda brown sugar, nix the oil and either bake or boil the breasts, count the juice as a fruit, delete the soy sauce (unless I pick up a low-salt one)...no cornstarch....yah. That'll work! LOL!!! I think it'll still taste pretty darn good! Thanks, Holly!

WOW, everyone is doing so fantastic. Lynn, you can make substitutes. I use gluten free low sodium soy sauce, and sugar free ketchup and brown sugar splenda, so the calories are way less, but this is the original recipe. I love it, in fact after posting it for you guy's, I made it for dinner last night, I couldn't resist...so yummy
