I always chop and freeze them (and use them to cook from frozen, they are chopped small enough they defrost and cook quickly)

you can make baked onion rings, I make them for hubby as we don't fry either and he loves them.
Here is the recipe
2 peeled onions
3/4 cup all-purpose flour
2 -3 egg whites
3/4 cup nonfat breadcrumbs or 3/4 cup lowfat breadcrumbs
2 teaspoons italian seasoning
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1/2 teaspoon salt
Preheat the oven to 400 degrees.
Spray a baking sheet with nonstick spray.
Slice the onions width wise and then break them apart into rings.
Put the flour in 1 bowl, the egg whites into a second, and into the third put the bread crumbs and all the spices (all the rest of the ingredients).
Dip each onion ring into the flour, then the egg whites, and then the bread crumbs.
Place them on the baking sheet and then repeat with the next ring.
Bake them all for about 20 minutes or until crispy.

I'm going to be eating stir fry for a very long time after tonight. I went grocery shopping and picked up the 4 pack of peppers from no frills for $2, and 2 green peppers for 1.49 at freshco. I chopped up 3 of the red peppers, both of the green, and 4 of the 5 onions I had sitting under the sink. I tossed them all together in a giant ziploc bag and stuck it in the freezer. The bag is packed about as full as I could manage because I didn't want to do separate bags LOL! Good thing I have plans to make fajitas and will have to plan to do some stir fry with rice dishes too. I didn't think those few things would produce a massive pile of chopped veggies! Sure beats paying $8 a bag for pre-frozen stir fry mix too since it cost me less than $3.50 to do up.

I make a poor mans onions soup.
Caramalize the onions, add those to an onion soup mix.
Portion out the soup, add cheese and enjoy!
Sometimes i will add croutons.

Onion soup sound the best bet, hope it not just you eating it, 2lbs of onions will make a lot of soup...
