I love soup! Any kid of soup! I have my favorites but any soup will do. I made this huge pot of
vegetable borstch this morning. The soup has loads of fresh vegies: beets, carrots, yellow wax beans, onion, celery, 1 clove garlic, beet leaves, baby potatoes, fava beans, 1 strip of bacon, dill.

I too love soups, especially noodle soups. Your soup reminds me of my mom's legume soup - the beets color the soup nicely and she also adds bite size riblets. My hubby makes a fantastic butternut squash soup. Yum! I love soups for any time of the year, even when it's hot outside I can still go for soup.

Mmmm, now I am hungry!! Soup is such a perfect feel good meal, can be hearty, or light with a clear broth. LI lve soups too!

I love soup more than my DH and DS do, but still make them regularly. With my pressure cooker it's even easier, a soup I might do for five hours or more in the crockpot, I can have it done in 40 minutes.
Potato soup is easy and yummy (cover potatoes with chicken broth, add some minced garlic and onion. When potatoes are fully cooked, mash them or use an immersion blender for a smooth soup, add shredded cheese, a bit of cream cheese, then thin it with some milk or more broth). Top with bacon.
Taco soup is chicken thighs (with bones, no skin), black/red beans, corn, salsa, taco seasoning, chicken broth to make it as thin as you like. Remove the bones, shred the chicken, top with cheddar and sour cream.

Zonny your potato soup sounds delice! My mom used to make some sort of potato soup but she didnt blend the potatoes. She used new baby potatoes, cut in half, some pièces of kielbassa and lots of dill. Ive tried to make this soup but it never tastes like hers.

Usually, I use blender make the soup thicker, I never let vegetable like that.

I did my borscht up this a.m. BUT I combined the best of 2 recipes to give extra flavour. The usual ingredients are beets, carrots, cabbage, onions, celery leaves, tomatoes and potatoes, but I tossed in other things I had on hand ( bits of the following all fine diced : green onion, green beans from the garden and 1/2 large green pepper ) and tossed in 1 can drained chick peas, then added the ketchup, dry mustard, cumin and s & p to taste. I went out of my way to grab NF sour cream ( 2/$3.00 ) today so we could place a spoon on top when serving.
I think borscht might be my all time favourite soup/meal.

I made a chowder for dinner and it was divine! Started with sauteing chopped celery, then added diced orange bell pepper, diced tomatoes, parboiled diced potatoes and carrots (drained), frozen corn, precooked and finely chopped bacon, precooked scallops (probably didn't have to precook them but I didn't want too much of a fishy taste throughout the chowder), and milk. I ate it as a soup but have also made it before without the scallops and served over seared fish which is equally delicious.
