Whenever our DD and SIL go to Mexico they look forward to the street food that's corn on the cob rolled and slathered in a mayo dressing, then in spices! Our DD gets it as giblets in a cup with the mayo and spices mixed in...neater, lol.
Yes, so absolutely I'll get the stuff for our SIL to bbq them up, he'll enjoy replicating something so close to the streetfood they love there!

I made a Marinated cucumber, tomato and onion salad. Also opened a tin of tuna and mixed it with some Boston lettuce and thats what we had for lunch.
MARINATED CUCUMBER, TOMATO & ONIONS
3 MEDIUM CUCUMBERS, PEELED AND SLICED 1/4 INCH THICK
1 MEDIUM ONION, SLICED AND SEPARATED INTO RINGS (I USED A RED ONION)
3 MEDIUM TOMATOES, CUT INTO WEDGES
1/2 CUP VINEGAR
1/4 CUP SUGAR
1 CUP WATER
2 TSPS SALT
1 TSP FRESH GROUND BLACK PEPPER (I USED REGULAR PEPPER)
1/4 CUP OIL
COMBINE INGREDIENTS IN A LARGE BOWL AND MIX WELL. REFRIGERATE ABOUT 2 HOURS BEFORE SERVING.
HAS A LOT OF LIQUID AND I KEPT IT AS A SALAD DRESSING FOR ANOTHER DAY

ok, so yesterday DD and her hubby came over and brought us 15 English cucumbers, 15 tomatoes on the vine and 12 Boston letruce with the stems attached from one of the local greenhouses in her area. Yesterday i used 3 cucumbners, 3 tomatoes and 1 boston lettuce. I dont want to lose all these vegies but i cant freeze them (except the tomatoes), so what do i do. For lunch today, im making cucumber sandwiches. and for dinner tonight im making a boston lettuce salad and chicken wings.

Potatoes THREE ways! These days it seems it is taking us too long to use up a 10 lb. bag of spuds, and this last bag was showing signs of waning, so I created 3 separate dishes that can be either a main dish or a side.
Bottom left is a cheesy, diced tomato layered casserole that calls for slices of zucchini, I just used sliced potatoes instead.
Bottom right is corned beef hash and centre back is a nice big batch of Chana Aloo.
The smells in here atm are sure to wake the guys up. They are early voting today.

The prep is where the work is with these. DS and I love 'em! DH not as much.
I started well before lunchtime to get the rice made, the vermicelli noodles and shrimp cooked up, plus all the colourful veg sliced up.
Those rice paper ones gave me more trouble than i thought they were worth, and I am really the only one who loves those, so made just a few.
So glad I kept various sizes of the take out trays from when DS had ordered these from a Sushi place. Mine are yummier! ha ha

oh @walkonby I am drolling over yours pictures .This is awesome.I wish I had that talent to make sushis too lol. But I will take the time to learn and purchase the appropriate ingrediants somedays because purchasing those are so expensive... And I love sushis so much ahahahah My friend did work in a sushis place and make some but she is so busy right now with her new boyfriend,son and job and ect... hahah

Roasted red pepper/cauliflower soup, 1/2 stuffed red pepper, garden salad, steamed green beans, asparagus and broccoli. Hummus with Daikon radish sticks. An Apple Bubly water. I am more stuffed than that pepper atm.

Last night hubby bbq'd pork brochettes with mushrooms, peppers and onions marinated all day in bbq sauce. Had Rice Pilaf with that and a large garden salade using tomatoes, green onions and curly head lettuce from my garden!
Tonight is still a mystery. Dont know what to make, but hubby took out some Apple Sausages, never had them before, hope they are good!

So funny that today's lunch was almost a carbon copy of Tuesday's. It amazes me that this huge meal is only 304 calories?!
When I think of all the crap food choices I had indulged in ( and had packed on weight from during the 2 years of free-for-all covid times ) I could kick myself.
The only difference here is I added a second soup serving of butternut/sweet potato. Yesterday's soup making marathon has supplied me with plenty to have at both my lunch and dinners for a whole week! I sure love soup. lol
EMBARRASSING UPDATE:
oopsy daisy! I mixed up my lunch and dinner items when I was putting the lunch together! Oh well, it all balanced out tonight as I eliminated the stuffed pepper, hummus, Daikon and salad. So...... this lunch was quite a bit more than 304 calories...ha ha on me! ( shhh! it was 484, no wonder I was so full after ).Last edited by walkonby; Fri, Jun 10th, 2022 at 08:15 PM.

Back with another new batch of red pepper/cauliflower soup, a homemade ( adorable personal pan sized using mini loaf pan ) turkey meatloaf, steamed green beans, a blob of cooked spinach and a garden salad. A second mug of coffee was absolutely needed! The Blue Jays are breaking my heart atm...Yankees will sweep us today.
UPDATE: The Blue Jays!! What a game, a rallying comeback win ( final 10-9 ) with the help of a Grand Slam from Lourdes Gurriel and a 3 run RBI from Teoscar Hernandez! Smiles all the way around!!Last edited by walkonby; Sun, Jun 19th, 2022 at 06:07 PM.
