    A shocking 515 calorie lunch, but I enjoyed every morsel! This is what happens when I eat breakfast at 8:30 a.m. then 6 hours pass.
    I kept adding items to my plate for lunch....lol!
    Both dinner and the evening snack will be moderate but still yummy!

    Another unplanned very late breakfast at nearly 1 p.m. The result was the same as the last time this happened. I prepare too much thinking I can eat it all. I couldn't...lol. This sets the day up for a combo lunch/dinner somewhere around 6 or 7 p.m. and then enjoy a snack after the Leafs win.
    ( positive thinking ! )

    I spread 3 Tblsp of hummus over a full sheet of Joseph's lavash " bread " , topped it with 3 oz. sauteed sk/bl chx breast meat with onions, mushrooms and drizzled a Tblsp of balsamic dressing over and rolled it up tight.
    It was cut into many bite sized pieces. Realized I'd have to save 3 of them for another time.
    Dug into the warmed up stuffed pepper and about 20 minutes later had a 1/2 cup Greek yogurt with 1 Tblsp pure maple syrup and 1/2 mango diced up.
    Came in just under 500 calories for all.

    traditional vietnamese square sticky rice cake (sticky rice filled with marinated pork belly, mung beans, seasonings, then wrapped in banana leaves then boiled for hours depending on size). We make/eat them around lunar new year. I made a batch once maybe twice a year usually a few weeks before the new year and give them to my parents - saved a couple for us. It's a 2 days process for me and required planning.

    yesterday homemade french onion soup used up a hamburg bun from freezer in lieu of bread

    today tuna on a bagel and chips (yum)

    Lunch was a " tad " late, but no biggie. Had 2 cups of my pumpkin soup, a small mixed salad and a teeny bit of cooked spinach with the teeniest swipe of butter on it. Two x 5 calorie jello cups and I was content.

    Last night I made my very first diet styled beef stew. This will be the first beef I've eaten since Jan 20th.
    I used beef that was cut into bite sized pieces from the Metro roasts that were on sale a while back, I know they weren't Prime rib, but another good cut, not as fatty as the PR.
    My added veg were minimal sweet potatoes instead of white, carrot, onion, celery and mushrooms. S & P and herbs too.
    Pressure cooked the meat pieces until quite tender before adding the veg, and no thickening the juices with flour.
    I divided the whole batch up into 5 reasonable servings, but I'm going to enjoy 1 1/2 servings for my lunch!

    I'll stick with the theme here, as I also had " leftovers ", but mine were in the freezer....individual size pizzas!
    Decided to splurge on my afternoon meal and have both types. Seems I have a thing for Pesto, feta and black olives because those were the toppings on the first one.
    The other was basic, marinara sauce, Bocconcini cheese and diced veg.
    Both of these were made as a very thin crust ( the 2 ingredient dough recipe ) so I was able to squeeze in 2 cups of the red pepper/cauliflower soup and 2 Jello cups for dessert.

    I'll have to use "cleaning out the freezer" for lunch today. Air fried mozzarella sticks with pizza sauce and pogo sticks baked in the oven (they didn't fit in our tiny air fryer)

    A veggie/hummus/Lavash sheet wrap, bowl of Greek yogurt with bits of diced fruit mixed in, coins of roasted butternut squash and zucchini and egg salad on Ryvita crispbread.

    kinda leftover; i used leftover kfc chicken, rice and frozen veggie medley and new eggs to make fried rice - about 4 servings for lunches at work. I won't have it 4 days in a row.
