1/2 a beef dip sandwich. Brought it home for DS last night but he didn't eat it (he made wings and onion rings for him and his GF) Will take the other 1/2 tomorrow if it is still in the fridge in the morning

found some shrimp in the freezer so i thawed that out this morning and had it for lunch along with some veggies and dip. Hubby has a piece of fried chicken from the other day, 2 boiled eggs and veggies and dip.

I volunteered DH to make French toast. We're eating lots of comfort food before we start our healthy eating next week.

I will credit/blame @SassyAshley for me making a nice batch of Creamy Fish Soup just now. This will be for lunch tomorrow.
I wanted to make clam chowder, but had no clams. Sassy's potato soup sounded like the kind of thing that will warm you up, and our temps are a tad nippy atm.
DH loves cod and that is the fish I used....so glad there was a package of frozen fillets still hanging around.

We used up the potatoes and onions and made a corned beef hash. I cut some swiss cheese slices into strips and we melted them in. DH gave the thumbs up

Made a pot of beef, barley and vegetable soup. Kind of tasted like minestrone.

Made my diet soup. 2 cartons no salt chicken broth, added 1 c. each of sauteed diced mushrooms and Vidalia onions, then thin carrot coins, sliced cabbage, fresh green beans, 5 oz. of diced up leftover cooked chicken breast, and baby spinach at the end. That should give me at least 4 or more servings.
I also made up a " 6 bean salad ". Cooked the soaked beans from overnight, then added the steamed green beans and thin slices of both Vidalia and green onion. Black pepper a must. Sparingly drizzled 3 tblsp of Kraft Balsamic dressing thorough it. Chilling now, will probably be tomorrow's lunch. Enough for probably 3+ servings.

We tried air frying Johnsonville hot italian sausages and they turned out fantastic. We cooked them at 360 for 6 mins, flip and another 6 mins. Definitely easier than shoving off the BQ.
