    i picked up a KFC bucket meal and a large side of popcorn chicken for the girls; that was our father's day lunch.

    Freshly baked whole grain loaf from Blackbird Bakery and chunks of British Stilton and Shropshire Blue cheese. Yum!!

    I'll be enjoying my portion of 2 small stir fry's for my lunch. DH and Ds will likely have theirs tonight.
    The protein in first one I made was large cooked shrimp soaked in rice vinegar/soy sauce, sliced ginger and garlic.
    The next batch I used chunks of chx breast soaked in rice vinegar, red pepper flakes, herbs, soy sauce and honey.
    Mixed the same veg in both....sliced carrots, green onion, celery and bell peppers, adding the bok choy from the garden last.
    They were sauteed in the wok in small amounts of EVOO and Sesame oil, and I mixed in cooked Basmati rice at the very end.

    Ooh, @walkonby that basmati rice elevates any meal it is added to!

    Regular Ruffles potato chips for lunch. The salt craving is real.

    Ao true about the rice, we used to be all about Jasmine rice, now it is always Basmati.

    I fashioned a homemade quesadilla using my large fry pan. ( gave our nice quesadilla maker to DD )
    Microwaved 1 tortilla to melt the layer of 3 grated cheeses ( Swiss, Mozz and Havarti ) on it, browned one side of the other tortilla in pan, flipped it over, added thin slices of oven roasted turkey breast and placed the soft cheesy side of the first one over it.
    One last flip and ta da!!
    Sour cream and salsa for dipping/spreading.

    my guy made me a nice little lunch. A vegan "egg salad" sandwich. Rice salad and fresh strawberries. It was really good and hit the spot!

    My SIL and I split an order of halibut tacos and halibut and chips down on the dock in Steveston-they were to die for. Then we hit up a few thrift stores and a fruit stand on the way home-dinner is fresh corn on the cob. Tomorrow headed back to Calgary.

    I bought a bunch of fresh vegies at the Market: lima beans, yellow and green beans, carrots, celery, onions, beets, potatoes and a bunch of fresh dill. And i made a large pot of borscht this morning with all of that. Also added a smashed clove of garlic, half a strip of chopped bacon, salt and pepper to taste. Had it for lunch with a piece of Kimmel Bread and butter.
