So it's Friday, and there's always the urge to just head out for dinner, or pick something up on the way home...
But a home cooked meal just always seems to hit the spot...
So what is the easiest and most delicious meal you can make on a Friday night?

I love having breakfast for supper!!!! All week long its toast and juice, tims coffee and a muffin, whatever is fast and quick to make and eat for breakfast.... but some times, making a big breakfast for supper is a total treat.

My favourite go-to meal is shrimp scampi linguini!
shrimp, garlic, capers, parsley, wine, lemon juice, BUTTER, and a bit of diced tomato to give it some extra zip.

Friday is our meatless day, so it's not always easy to go with quick and easy.
Best for that would be something with eggs, I suppose - most delicious while still being easy would be a huge omelette with fried potatoes, I suppose!
More work is making pyrohy - but that's usually the yummiest meatless meal!
(Oh, great, now I want fried potatoes, lol!)

kale with balsamic dressing! i don`t generally make heavy meals anyway so everything is super simple.

I would have to say most Fridays seem to be Nachos or Pasta, but more than anything Nachos.

Shrimp with vegetable mixture. I thaw frozen shrimp, warm them in a fry pan, add cut up onion, mushrooms, red, green and yellow peppers. Make a salad (I usually buy bagged salad) and mix it with romaine lettuce. During the week I take some time to cut up peppers, onions, mushrooms so I have enough to make several meals. Cuts down on prep time.
Another quick veggie favorite.. eggplant (sliced into thin pieces), 1 egg (whisked in a bowl), salt, and bread crumbs. Take each piece of sliced eggplant, lightly add a dash of salt on each side. Coat each side in egg, and finally coat with bread crumbs. Bake on cookie sheet for 15 min at 350 F.

Oh I am 100% with DiamondLil, when we can't decide what to make....breakfast for dinner is hands down the fastest and yummiest!

^ yum, I forgot about egg foo yung - I do make veggie or shrimp ones when I have the ingredients. I make small ones (like latkes) and fry them.
Same with the eggplant, though I fry those as well, have never tried doing them in the oven. I make them to go with something else for a meal.
I don't fry things often, so these two above dishes aren't done very often, even though we love them.

I have to confess that my quick go-to meal is a SmartOnes or Stouffers Microwave dinner. That's what thy are designed for! And since I collect the Stouffer's pins but don't use them I can always trade them here! lol

Pulled pork sammies. yum! I do my own home canning (I have a pressure canner) so i open a can of pork and drain it and shred it... dump in bbq sauce... a dash of liquid smoke, cumin, brown sugar, vinager, hot sauce, garlic powder, black pepper and a dash of hot red pepper. Cook it for 5 mins and presto chango you have hot n fast cheater pulled pork sammies!... from the jar opening to serving it is under 10 mins.
