    We've been doing this too!!! So excited to hear someone else who has recently started. Sundays are "egg day" for us. DH and I have eggs for dinner and the "kids" (cats) each get a yolk with their dinner and I use their whites in my dinner. They gobble it down like nobodys business. Everyone in my house loves egg day!

    Monday nights are vegetarian - no meat meals. We've started with grilled cheese, mac and cheese, pancakes, perogies, home made chow mein, homemade poutine, sweet potato soup. Plus I've got lots more vegetarian recipes to try pinned on pinterest.

    We started on egg day and veggie day because I'm in the process of making the switch to getting all our meat from a local farmer whose animals are actually free range (not free run, massive difference) and it is very expensive but so much better for us.

    P.S. A good idea for your veggie waste - tops of carrots, potato peelings, etc is to put them in a large freezer bag and save them with all your bones until you have enough to do up a pot of broth. This way you will still get the nutrients from what you would have normally tossed.

    Additionally everytime I hear someone peel carrots I shake my head. Carrots do not need to be peeled!!! They just need a good washing.

    eggs, bacon and peppers sound good I am going to try it soon. i don't really like peppers but since I got breast cancer I have been trying to eat healthy. So peppers are in!

    Saved half of the stems from my broccoli and froze them with some bones for future stock. I used the other half of the stems with the florets in broccoli soup yesterday. I realized afterwards that it would have been cheaper to buy frozen broccoli because I doubled the recipe and the fresh broccoli were so tiny thus costing me more

    Listed some vintage tupperware on kijiji and am going to price and organize all our garage sale items later today so they are ready for the group sale in June.

    We had a "catch-up-on-sleep " day and stayed in bed watching TV. Rainy day- Spring-ahead clocks yawning kind of day.

    Yesterday I made up a potfull of rice to use as a side this week. We always wind up cooking supper during "prime expensive " time for hydro so this will help. Also cooked an extra chicken breast which we'll use for lunches or a stir fry.
    I used up a corn muffin mix which had been hiding in the cupboard.

    Managed to get some "5 gallon" food grade buckets for free today to store all my rice in from the uncle bens promo & FPC's last year. I say in quotes because the most definitely are not 5 gallon but are good enough for free.

    I also picked up some medication today that is double the dose and then cut the pills in half so they last twice as long. Its cheaper doing it this way then just getting full pills of the correct dosage.

    Made sure to hang all the bedding to dry last night that was washed yesterday.(spare room)

    Made my coffee at home this morning, brought cereal and brought my lunch (leftovers from Friday night date night.

    Dinner for tonight is planned and ready to make, steak (pulled from freezer), mushrooms and onions, baked potato with the fixings, and green beans from freezer.

    A no spend day today for us!

    Got my snow tires removed and my summer tires put on for free today. I bought the tires at Active Green and Ross so they do free tire switch overs for you twice a year.

    Tonight I will heat up and share the extra chicken breast, rice and a combo of kernel and creamed corn. This is still the creamed corn that I got a ton of on clearance last summer for .44 a can.
    Dh is not eating much these days. So I think I will hop over to Sobey's and use my Chapman's coup to get some free ice cream. See if I can tempt him but not me!!
    I finally got to sleep at 7:00am not having slept through the night.
    Dh's sleep apnea mask was sounding like a buzz saw so I went downstairs. I could STILL hear it. He slept so badly the nightbefore that I didn't have the heart to wake him.
    He can stop the noise if he sleeps on his side but it hurts too much to do that.

    We had to go to our Dr this morning for a meds review and we waited so long he nearly fainted. She has reduced his blood pressure meds as it was too low but his red cells are hanging in this week after the 4 units of blood he had in the hospital last week.

    Oops didn't mean to stray.

    I am going to try to get a few zzz's.

    Ate toast and leftovers for supper last night.

    We bought a soda stream a couple weeksago....and flavors. So far we've really enjoyed it and the amount we've used it... we would have spent more per pop in store than we spent on the flavors and we have lots left.
