Has hell frozen over???
Guerrero finally hit his first HR of the season IN Rogers Stadium!!

Even funnier was Springer hit a HR right before Vladdy then Okamoa hit one after!

4-1 now.

Prep is everything! Thanksgiving get together for 8 is made so much easier when I can make things ahead.
Made a pan of lemon squares, they were good BUT I want them more lemony! This is a new recipe that I'll
tweak next week.

Next I made a yummy mixture and scooped out 45 mini cheese balls.. They're double Ziploc wrapped in the freezer,
I'll thaw and roll them in the yummy crushed coating the morning of Oct 11th.

My rolling pin got a workout on the shelled pistachios and these incredible sweet plantain chips!
I made everything very small to compliment the size of the balls. Dicing tiny bits of dried cranberries was labour intensive.
Coated a few balls to get the guys opinion on them. I liked the one I had!!

We'll be having 2 types of the " evil carbs " that traditionally go with turkeys. One is going in the bird, Combined Dried
French bread cubes, diced apple, crumbled cooked breakfast sausage, all fresh leafy herbs, diced celery, green onion, chx
broth and eggs to bring it together. I filled 2 net bags, they're in the freezer now.

For the 2nd one I baked a double recipe of corn bread, cubed it, then dried the cubes so they held their shape.
The large bag is in the freezer too. It'll get mixed with diced veg/herbs/spices, and cooked in the cast iron Dutch oven.
So a dressing, not a stuffing...lol.

Lastly I made a Spiced Gingerbread Loaf. Came out amazing! Ingredients had ample amounts of Molasses, sugar,
buttermilk, butter and ALL the dried Pumpkin-y spices. Where is it? In the freezer of course... ha ha I'll make the orange
juice drizzle icing on the day.

The only desserts we're offering are lemon squares, Gingerbread Loaf AND Pumpkin Trifle. Can't wait to build the trifle
the day before the dinner. I warned the kids and guests there will be NO pumpkin or apple pie this year, sorry. ha ha

Hope everyone will be celebrating Thanksgiving in their own way...hopefully with family and a few good friends!
