I found a couple of tasty ideas from Pinterest to share.
First is Smashed Potatoes from Pioneer Woman. Find full recipe and site here: http://thepioneerwoman.com/cooking/2...-hot-potatoes/
In a nutshell, you boil your potatoes to fork tender, place on a cookie sheet (I put parchment on first). Squish them a bit with a potato masher or even the bottom of a coffee cup works (tried this while on vacation). Spray/drizzle/brush with olive oil, sprinkle with salt and pepper and whatever other seasonings you want, and put in the oven until brown and crispy. While on holiday and while it was hot I've done this last step on the bbq, turn on one side and cook on the other.
Next potato is also from Pinterest, and called Hasselback Potatoes, have no idea why. The link doesn't seem to work anymore, but the idea is you use whole baking potatoes, and make a bunch of slits in the potato, cut it nearly all the way through but not all the way. I make it easier by microwaving the potatoes a bit until they're softer, that way it's easier to prevent cutting all the way through. Spray/drizzle/brush with olive oil, sprinkle with salt and pepper and whatever other seasonings you want, and put in the oven until brown and crispy. Put cheese into the slits if that floats your boat toward the end.
With both, I find that salt, pepper and olive oil are enough for these, you don't even need butter. Cheese is nice, but not necessary. Bacon works great on both.
I have a nifty plastic oil sprayer that I got from Superstore for under $10, works great for both of these recipes.

Hasselback potatoes look like they've taken you a million hours to prepare, but I've heard they are quite simple. I'll have to try them soon - some really potato lovers in this house (but not me).

Zonny, sure like the Smashed potato recipe great for the bbq, can even cook the potatoes ahead and when its dinner time already to go, thanks for posting!

ah yes! the smashed ones, I made them at Xmas and oh they were such a nice crispy compliment. I think I used those fancy little potatoes, reds and whites. Mmmmm. now i want some. lol ty for posting Zonny

I saw the smashed ones made on some cooking show (think it was America's Test Kitchen), and took notes - definitely have to try these!
I've been making hasselback potatoes for years - slice really thin, and what I do is after a bit of baking, take them out and seperate the slices a bit so they fan out, they tend to stick together when they start cooking.
It also helps to baste them to make them crispier. My recipe uses Parm cheese as well, but I don't always use it. I always make extras, because they are so yummy.
As for the name -
This Swedish dish takes its name from Hasselbacken, the Stockholm restaurant where it was first served.

The smashed potatoes were on Rachel Ray a while back. I have done potatoes like both these recipes for a long time now. For the hasselback, once they're almost done, I sprinkle green onion and roasted garlic into the slits, and finish for another 2 or 3 minutes, simply deliciious

Potatoes are my downfall, I LOVE them, and a meal sometimes just doesnt feel like a meal without them.....We all need a little sunshine every now and then

Ive made the hasselback ones before, but i put a mixture of horseradish, tomato juice and worchestershire sauce with a tich of onions in the slits. and than cook it. its absolutly delish!

Hi all
There are many vitamins in a potato and its useful for gain weight if we eat it after boil.Potatoes are mounds of carbohydrates and contain little proteins too. mmmm potato, I have made both of these before
My latest fave is potato pie
Not sure where I stole this from but I have modified it a bit, it is just fine without the crazy amount of cheese the original called for
- 2lbs potatoes (I like yukon golds but I don’t think it matters)
- 2 tbsps cream cheese (I have also used the new cooking creme when we got it free)
- handful mixed grated cheeses
- salt & pepper and any seasonings you like to taste
- 1/2 small red onion, roughly chopped
- 100g mushrooms, halved and sliced
- Breadcrumbs
- Olive Oil
Cube potato and cook until done but not overly soft.
In a frying pan, cook onions until soft and brown and add mushrooms.
Once potatoes are done, drain and roughly mash leaving them chunky.
Add cream cheese and 1/2 grated cheese and seasoning and stir through (it should still be slightly chunky)
Take a pie dish, line with foil (I hate cleaning up pie dishes), spray on olive oil and sprinkle breadcrumbs to coat. Spoon in potato mixture, top with remaining cheese and bake at 375F until cheese bubbles.
Allow to cool and slice into 8 wedges
