Supper last night was salmon, rice and peas...spinach salad for the adults. I made Chicken Chow Mein for supper tonight. I also made some chicken barley and vegetable soup this afternoon (no pic).

Last night I cooked with ground chicken for the first time. To do a true taste test, I made meatballs the exact same way I would do them with either ground pork or beef. They were pretty good, but it sounds funny to say - they were too lean. They didn't even soften in the gravy later.
Anyway, they were yummy - served them over smashed potatoes, with corn.
Tonight is a mystery yet, because the pork tenderloin taken out from the freezer turned out to be dated May of 2008! Yay, we got to the bottom of the freezer. Oy, it's a waste, but it's going in the garbage....

Nat, if you soak some breadcrumbs in milk (I like to use day old french bread that I grind in the foodprocessor), then squeeze out the liquid and add them to the ground chicken (or turkey), it helps with the moisture. You don't need a ton of them, just a handful per pound. I too find that ground chicken can be dry. When adding the soaked breadcrumbs, you can add tons of herbs to the bread before you add it!

Last night I ended up making a roasted chicken dinner with all the fixins. Today I'm going to make a nice chicken stock and pop it in the freezer for later use.
Tonights dinner will consist of....hmmm....I feel taco's would be good, tons of fresh veggies and a great greek salad. Yes, thats it, it's settled...taco's it is!We all need a little sunshine every now and then

we had some of the homemade chicken & rice soup last night and the girls and myself made some flatbread pizzas with mushrooms, peppers, deli ham, summer sausage and some cheese.
tonight it's sheppards pie with some broccoli, rice & veggie stir fry for myseslf
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

garlic and onion with mushroom 'saute', fresh green beans added, plus left over boiled chicken cut into slices then put over rice. it smells SO good.

I will be roasting some cherry tomatoes and some fresh garlic and adding them and some Boursin cream cheese to penne pasta Man I love that cheese

Was going to be pasta...but then I accidently made homemade ice cream...with crushed oreos in it...with crushed smarties sprinkled on top...I feel a bit...unwell .
