lol.I had a blt sandwich.....I was feeling lazy today.

Last night we had Chicken Tortilla Soup!! Chicken broth, diced tomatoes, kernal corn, bell peppers, garlic, home made "taco" seasoning, lots of chilli powder and crushed chilli's, bean mix, two chicken breasts, slow cooked for 8 hours. Then I shredded the chicken, put it all in bowls, covered it in cheese, then covered it in home made tortilla crumble.
Tomorrow, we're making home made pierogies!

Last night we had leftover perogies with onions, and a stirfry with pork loin, onions, carrots, celery and broccoli.
I haven't been cooking myself since my leg got out of commission last week, so I'm more of a director, lol! I do what I can at the kitchen table, all the chopping, etc., but usually my son, sometimes my husband, does the actual cooking. It's not easy on them because they have to do this once they come home from work, but we can't afford takeout every day, so it's all we can do for now. My son, deep down, is appreciating the new skills and recipes he's learning... really, he is!

Meatball that was reduced 30% off, leftover piece of chicken meat pies,mashed patatoes with a lots of butter maybe a salad and for dessert fruits cake and a yogurt

Veggie and barley soup has been cooking in the slowcooker, smells SO good. Will have hotdogs to go with it.

tuna/brocolli/cheese tortillia wraps. covered in cream of celery soup/tomatoes and baked then covered in more cheese. its so good.

Denver Sand. with Sliced Tomatoes and Lettuce. Fried Potatoes and onions and Snap peas. Looks like no room for dessert again

So finally getting back into a proper cooking routine after the Holidays,lol
Today i made Mexi Meatless Shepherds Pie(new recipe!) and salad -which turned out pretty well.
Followed by fresh pineapple and whipped cream(leftovers from the holiday season *sigh*)Come on -Join me ! Get Points, get Free stuff

BLTs on some kaiser buns (had to use them up) and i made a veggie chowder. PB & Chocolate chip cookies for dessert. the cookies were a tad well-done

Still in diet mode. Lightly sauted tofu slices with sauted bean sprouts seasoned with fresh garlic, fresh ginger, lemon juice, and a bit of soy sauce. Finished with a slice of bread and a mandarin orange.

I had 2 1/2 hour dentist appointment today and knew I didn't want to come home and cook. Threw some homemade turkey soup from the freezer into the slow cooker this morning and made a salad. Made some nachos to go with it when I got home. Tried the habernaro heat cheese from Kraft and the boys said it was hot but good. Mouth is still frozen so I didn't try it!!
