Pepperoni Pizza Puffs adapted from Everyday with Rachael Ray and Cassie Craves
Printer Friendly Version
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 1 tablespoon Italian seasoning
- pinch of salt (my addition, optional)
- pinch of red pepper flakes (my addition, optional)
- 3/4 cup whole milk
- 1 egg, lightly beaten
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 cup cubed pepperoni
- 1/2 cup store-bought pizza sauce
1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, salt and red pepper flakes (if using) ; whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand for 10 minutes.
2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
3. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
NOTE: All my batter did not fit into the 24-mini muffin pan. So I made a full size muffin with the leftover batter. Some pans are larger than others so you may not have have an issue.JOIN NOW WIN BIG in the Survivor Pool starting in the Spring

Baked Eggs
Prep Time: 2 min. Total Time: 32 min.
Ingredients:
2 - 4 dozen eggs
1. Preheat the oven to 325 degrees. Position the oven racks in the center of the oven. 2. Place the eggs parallel to the bars on the racks. (see picture below) 3. Place a baking sheet pan in the bottom of the oven (just in case an egg breaks). I have never had a mess in my oven in all the times I have made this recipe. I have had eggs break, but they cooked inside when they do so there is no mess 4. Bake for 30 minutes. 5. When the eggs are done, fill a large bowl with ice water and move the eggs into the bowl. I do this a few minutes ahead of time to make sure the water is COLD! 6. Peel the eggs as soon as they're cool enough to handle, then return them to the ice water to thoroughly chill. I think that the eggs are easier to peel if they are allowed to chill in the water for at least 10 minutes. Moms amazing dip on game day!
8oz. softened cream cheese
1/2c.sour cream
1/8tsp.garlic (salt-powder)
1/8tsp.crushed red pepper
3oz.pepperoni
1/4cup onions+greenPepper
1/2c.Mozz.cheese shredded
1/2c.pizza sauce
pre heat oven to 350- Mix cream cheese with spices in a mixing bowl,spread into 9-10"pie plate add pizza sauce + toppings bake for 10min or untill dip is warmed threw dab away grease from edges with paper towel then add cheese bake in oven for 10 more min or untill dip is bubbling-Must let sit for 5min to settle all the flavors...eat with nacho cheese Doritos

Cookie Dough Greek Yogurt

I wanted to share what I’ve been making lately that makes me so happy. I love peanut butter and chocolate chips together. Usually, I just eat peanut butter out of the jar with chocolate chips sprinkled on top. This can be dangerous, to my waistline that is! I thought of a New Years Resolution minded way to enjoy my sinful indulgence with less guilt; mix those two ingredients with something that is healthy and filling – Greek yogurt! This totally does it for me. I eat way less peanut butter when I make it like this and my kids love it! Oh my goodness it’s so good!
Ingredients
1 small container of plain Greek yogurt
1 tbsp nut butter (I used peanut butter)
1 tbsp sweetener (like maple syrup or honey)
1/4 tsp vanilla
pinch of sea salt
1 tbsp mini chocolate chips (I used Joy For Life)
Directions
Combine the Greek Yogurt with the nut butter, sweetener, vanilla and sea salt. Mix until smooth.
Top with Mini Chocolate chips. Enjoy!

Smores Stuffed Bananas
Bananas
- Marshmallows
- Chocolate Chips
- Cinnamon Toast Crunch Cereal, or Golden Grahams Cereal Or just plain crushed graham crackers
"A banana is sliced down the middle and stuffed to the max with marshmallows and chocolate chips. Wrap it in foil and throw it on a grill for a couple of minutes to get a warm, decadent banana melt. A handful of crushed Cinnamon Toast Crunch cereal on top is all you need to add the graham cracker element of your s’more and the perfect amount of crunch to compliment the gooeyness of everything else.
You’re gonna need a spoon for this one … that’s the only way to make sure you get every last morsel of chocolate and melted marshmallow. And it wouldn’t be a s’more if you didn’t get messy. If you can eat this melt using less than five napkins, you are my hero.
No grill?No worries. Just throw the foil wrapped banana straight on the cooking rack in a 400-degree oven for 5-6 minutes to get the same delicious result. These are also a classic campfire fave!
