I went to NF first to pick up some more of the $2/lb chicken breast that was still on sale.. and when I walked in, they had an entire long bunker full of them still.
Not really paying attention I put four packs of four in my cart and went shopping through the rest of the store.
I went back to that side of the store and happened to glance at the chicken, and then I noticed it was on for $1.22/lb!!
Needless to say I picked up four more packs. One of the smaller packs of four breasts was $1.54.
I may go back tonight and see if there's still any left.
We go through chicken breast like crazy around here, and I certainly don't mind trimming the skin/fat and pulling them off the bones. I normally cook them all up at once, and cut the chicken up after for adding to soup, pastas, salads etc. It freezes well, thaws nicely, and I use a vacuum sealer for the stuff that will be in the freezer longer.
In total I spent $26 or so on the chicken breasts, and I have more than 40 cooked up and cooling so I can chop and freeze!
Happy dance!
The later on I went to Sobeys and scored a SCOP on some English muffins so I saved $1.00, and found the Danactive yogurt in the discontinued bin for 50% off, so it was only 2.99, minus my $2 coupon (late march expiry). My daughter has been bugging for them, and I was going to pick them up for $4.97 minus the coupon at Walmart but was hesitating still. This was even better! The SCOP made up for the Yogurt drink.
(I was in Woodstock for this shopping trip)

I admire your energy to remove the skin and meat from the bone. I thought NF were skinless boneless, and when I arrived to grab some and saw my error I caved on them, luckily 6 pkgs of Blue Menu Turkey Breast fillets all had stickers with 30% off, so I grabbed them to coat with GF crumbs. Did save me the time, but I like what you did, very economical!!

That's great!
Nice savings and good for you to have them cooked before freezing.
The most I ever do is season them first. The best things in life...aren't things

I Went to my Mum's house tonight to use the vacuum sealer and the scale to divide it up in useable portions. It ended up being a little over 13lbs of ready-to-eat oven roasted chicken strips/chunks, seasoned the way my family likes. and no funky preservative taste to them... (as an added bonus: I know that barely any fat was used in the preparation, the salt content was minimized, and all of the herbs and spices were grown by us in my mums garden)
I can't even fathom how much it would have cost me to purchase it already prepared and cooked like that. I'll be making so many different things with it
. Chicken salad, chicken ceasar salad/wraps/pitas, pasta, chicken lasagna, broccoli cheese and chicken puff pastry pockets, pot pies, quesadillas, tacos, fajitas, chicken burritos, soups, raviolis, frozen chicken-rice entrees, fettucine alfredo with chicken and veggies...oh the possibilities!
I love cooking when the prep work is mostly done ahead of time. It makes it so much easier to make more diverse interesting meals, and less of the same old boring repeating entrees. (I'm not a fan of meal-plans because I hate creating them, no problem following them once they are made though, but to me, having something like this is the next best thing)Last edited by maribel; Thu, Feb 21st, 2013 at 09:37 PM.

Good for you! I've never frozen cooked chicken before, only raw. Doesn't freezing effect the taste?

I don't notice anything different about it, but that might just be my taste buds, or how I prep it.
I vacuum seal the packages that we won't be using in the first few weeks, and then bag them again to put into the freezer. It doesn't get freezer burn and I thaw in the fridge overnight when using it for anything where it isn't being cooked again. When it's being used in a hot food prep I might quick thaw depending on just how long I've been procrastinating about making dinner
.
The stuff we freeze in ziplocs comes out the same also, we just use it faster so no need for vacuum sealing. I think the important part is making sure all the proper internal temps are reached and safe food handling temps are maintained as well as heating/thawing/storage is done properly...
My very picky kid loves it, and that's pretty big in my view.

Holy casserole! Lucky you!
I only buy the ones with skin and bones, too - it's a lot of work to deal with them, but I use the bones for chicken soup with other pieces of chicken. I only get them when they are on for 1.99/lb - which is not very often, here!
