My username comes from the simply fact that I never use coupons, and never taught I would love it until I was off on Mat. leave and got some diaper coupons, I was amaze that I could go into a store give them a coupon and get my purchase reduce by so much. After that I feel in love with coupons and as the name says I love to use them.

How is everyone's meal plans looking for this week?

Mom is going to be working one night a week this month which means one night I am all alone for dinner. Kind of happy about this as I got so used to her working alot of nights I have come up with many meals that are quick and simple that I can make after work.

Mom is covering someone's class tonight so I think I am going to make rice and veggies with mushroom sauce, normally mom makes this with chicken but I will make it with mixed frozen veggies to get some extra veggies in my diet.

Tomorrow night not sure what to make yet, mom is working but I am also working at our other location which means I will be leaving earlier in the morning and getting home later than normal plus I am still in the end stages of my cold so by the time I get home all I want to do is crash out. Sadly there are no left overs for tomorrow and tonight's dinner will not have any so will have to see what I can come up with.

My meal plan for the rest of the week is:
Monday: left over Ham (from yesterday) with mash potatoes and veg.
Tuesday: Spaghetti with meat sauce and garlic bread.
Wednesday: Chicken with Rice (and I'll have rice left over for Friday)
Thursday: Tacos
Friday: Shrimp with the left over rice and a salad.
Saturday: Sloppy joes.

Meal Plan
Tonight: Leftover roast, potatoes, and veggies from last night
Tuesday: Hamburgers, potatoes, veggies (I make my own patties, I hate the pre-made frozen ones)
Wednesday: Salt and Pepper pork chops (new recipe I found on pinterest today), rice, veggies
Thursday: Breakfast for supper
Friday: Perogies, veggies and dip, cheese, pickles
Saturday: Hot hamburgers
Sunday: not sure yet!

Tuesday- turkey gravy sandwiches with mashed taters
Wednesday- ribs, veggies. salad
Thursday- chicken/stove top stuffing, veggies
Friday- LO's.
Saturday- hm?

Well I'm glad to be continuing this for April, as you might/might not be aware I join for lent which is now over...How did I do? Over all not bad.
I say that because the first couple of weeks the budget wasn't going down, but by week 3 it started to. Now there were 2 weeks when it was higher but that was because 1 week ground beef was on sale and the next week chicken was on sale, so whenever I see meat on sale the budget goes out the window as I have to stock up.
I have now gone 2 weeks without picking up fast food whether Pizza, McDonald, Swiss chalet etc. and that for us is HUGE as we would do that once and sometimes twice per week.
I have been doing meal plans for the last 2 weeks, this is my third week doing it. And this has been an amazing help. We know what we are having (I try to make stuff that we love) and so far so good.
I have even started baking (keeping it simple) only cookies, cupcake, and just your basics cake, so far the cookies and cupcakes are my best, the cake is alright but I don't use eggs so I'll continue to work on it. But with even doing those it has kept alot of snacks out of the grocery cart which has been a big help. I also make my own rice krispies squares. I'm going to start making my own granola bars today. Lets see how they turn out, but I've learnt a lot in the last 6 weeks, and I know I'll continue to learn more from all you frugal and smart ladies.
So thanks to all of you...this thread/s have been a BIG help to me, to the way I budget, shop, prepare meals etc. Let's continue to help and support each other as we continue to manage our finances better, as we continue on into April.
