I wanted to dice up celery because I had so much , but there would have been no more room in the pot until it reduced some, so I never bothered. I love celery in most everything soupy.
The 3 of us all enjoyed a large bowl of it during one of the many hockey games, and there is still plenty left for tomorrow and possibly Monday as well.
    thanks for posting the recipes!!
I'm SO happy you tried that recipe, Walks! It's a keeper, isn't it? I know what you mean by celery in soups, but this one...I wonder how it would effect the flavour, it's so prefect as it is...but you might want to try it next time... Glad the whole family enjoyed it!

Ohhhhh...yes, cornbread! Absolutely traditional! What time are you expecting Walks and I? We'll bring wine!
I'm to hear your opinion...it's so, so yummy! You'll be sneaking some for breakfast tomorrow!

Chili review: Made a nice pot of chili (albeit a bit spicy for me) but then I had the cornbread to sop it up and soothe the tongue lol

today's weather ( so cold and windy!!) made it a perfect day to have that meal ( again! ) so I had a bowl for brunch. I had no gf bread on hand but I do love the gf bagel chips, so I tossed a handful of them in, just like crackers!

Oops....I always cut back on hot spices....try adding a few shakes of vinegar into your bowl (yes, I always use vinegar in my chili bowl...lol!) to help cool it, or a nice blob of sour cream on top. So happy you enjoyed it, Padyo!

Walks...horrid weather today, but a good one for soups and chili!
We're driving to Parry Sound today for hubby's sleep apnea test........why rain?!

I can't wait to make chili in the fall. It is a winter food for me lol. Planning on growing lots of peppers, tomatoes etc so we can batch cook chili and pasta sauce for the freezer.

Mmmmm..we did that over the years, along with butternut squash soup we'd serve with a bum's-up canned pear in the middle of our bowls...lovely for company, too!
We also cook up a big batch of borsch, and OMG....it's heaven in a bowl on a cold winters evening, served with a dollop of sour cream...It's great to batch cook, isn't it?

Chicken breast on 2 chopped onion, topped with 20 oz/227g quartered mushrooms. 1 diced fresh celery heart, parsley, salt, pepper, 2 chicken bouillon cubes, cream of mushroom soup & cream. Will be served over Uncle Ben's basmati rice, Arctic Gardens Imperial mix veggies and maybe mayonnaise biscuits if I'm inspired. Frozen leftover heaven.

I need a chicken/mango crockpot recipe- any suggestions?

For overnight freezer meals tonight: ground chicken chili: Can of kidney beans, jar of salsa, can of tomatoes, pack of sliced mushrooms, diced celery hearts, onions, various spices, a shake of maple sugar flakes and a pack of Chinese takeout hot sauce that no one ever wants to eat. And chicken. Perfect for a busy work weeks.

But, but @macw1960, it's 30 out there! Hahaha!
I found some great crockpot recipes for our SIL, who's a SAHD, although he's turned into a really good cook now....I'll head up to the desktop later and post them here for you and others...most of them are only 3-4 ingredients!

Okay, @macw1960 , here you go, but I warn you, this isn't fine dining, it's for those days when you've about had it with cooking big meals and need something quick and easy. Okay? Of course you can always prepare your OWN sauces, meats, etc, this is just for easy-peasy!

    Here you go:

    Crockpot Meatball Vegetable Soup

    1 lb frozen meatballs
15oz can cannellini beans, draiend, rinsed
16 oz bag frozen peas and carrots
    24 oz jar marinara sauce
4 C chicken or vegetable broth

Dump everything into the pot, cook on low 3-4 hrs.

    Crockpot Fajitas

16 oz bag frozen stir-fry veggies
    1 packet fajita seasonings mix
1 lb boneless skinless chicken breasts or thighs, sliced into strips

You can place everything in a freezer bag for use later: thaw overnight, cook low for 4 hrs.
Or cook on lhigh for 2-3 hrs, until done to your liking.

Slow Cooker Sweet Glazed Pork Chops or Chicken
(an old recipe from the 60s)

    4-6 boneless pork chops
    1 12oz bottle chili sauce
    1 C grape jelly

Mix the sauce and jelly together until well blended, pour over chops in the cooker,
Cook on low for 6-8 hrs.
I find that if I cook frozen chicken until almost done, drain off the juices, then add the sauce for the next
couple of hours, the sauce retains it's texture instead of being diluted with the juices.

    Sweet Sour Chicken Bits

Brown cubed or sliced chicken breasts by browning them in a skillet.
Prepare sauce: equal parts Catalina dressing and crushed pineapple.
Place chicken into crockpot, pour sauce over, cook on low for 1-3 hrs.

I usually just drain off the chicken juices, add the sauce and stir and cook
in the skillet until nice and sticky. Serve over rice or noodles.

    Crockpot Salsa Verde Chicken

2 lbs boneless, skinless chicken breasts
    16 jar salsa verde
    1/2 of a 16oz bag frozen corn (about 1 2/3 cups)
8 oz package of cream cheese

Place chicken in crockpot, mix together the other ingredients, pour over chicken,
cook as directed, or about 3-4 hrs on low.

Cranberry Orange Pork Chops (or chicken)

2 lbs thick cut boneless pork loin chops
1 bag, about 12 oz fresh green beans, trimmed
15 oz can whole berry cranberry sauce
    9 oz jar marmelade
1 packet of onion soup mix.

Cook as directed for other pork or chicken recipes.

    Quick Turkey Black Bean Chili

1 lb ground turkey, broken up (pre frying works well)
2 cans drained, rinsed black beans
    18 oz tomato sauce
15 oz can diced tomatoes, undrained
    1 packet chili seasoning mix
any other vegetables you can add, sliced thinly: celery, green beans, fried bacon, etc

Cook through as pre other recipes, serve with shredded cheddar and tortilla chips.

    Crockpot BBQ Chicken

    2 lbs chicken breats
    3 c ketchup
6 tbsp brown sugar (I use Splenda brown sugar)
    2 T worcestershire sauce
    2 T soy sauce
    2 T apple cider vinegar
2 tsp red pepper flakes if desired
    1 tsp garlic powder

Place sauce in the crockpot, add chicken and turn to coat.
Cook on high 3-4 hours, shred with a fork and mix.
    Serve on buns.

    Crockpot Mongolian Beef

    1 lb stewing beeg
    2 tsp olive oil
1 thickly sliced onion (I like white or Vadailia, large ones)
    1 T minced garlic
    1/2 C soy sauce
    1/2 C water
    1/2 C brown sugar
    1 tsp freshly minced ginger
    1/2 C Hoisin sauce
    finely sliced green, red peppers

Place everything into the crockpot, cook on high 3-4 hours.

    Beef Pot Roast

One beef roast into crockpot, sprinkled with 1 packet of Hidden Vally Ranch Dressing
(only found in dollar stores...we buy in dozens for all the recipes we use this for)

Cook time depends on your roast size.

I have more but I thought this might hold you for a while...I have this collection for when
    we're camping....easy peasy!
I have made these and they are wonderful!!!

Thanks, they all sound good and since I am tired of the same old recipes I will try some of these out. Looks like I need to hit the grocery store first though for some bottles of thing I don't normally have on hand.

Made this one tonight:Cranberry Orange Pork Chops (or chicken)

2 lbs thick cut boneless pork loin chops
1 bag, about 12 oz fresh green beans, trimmed
15 oz can whole berry cranberry sauce
    9 oz jar marmelade
1 packet of onion soup mix.

I used chicken, homemade cranberry, a small jar of Robertson's Thick Cut Marmalade and the onion soup mix as I had those items in the house. I will serve with rice and broccoli. Absolutely yummy. I got DH to taste it and he said it woke up his taste buds and tasted really good. So that one is a keeper, thanks.
