Going to make Pork Chops, I am thinking in a nice flour coating with Roasted Potatoes and Carrots and probably some sort of Salad, maybe a nice Greek Salad.
I must admit I am obsessed with the Kirkland Feta, we have never bought it before and were hesitant to buy because of the how big the container is but wow I may never look back, it is so good.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

got kfc 10 tenders for $10, put them in the tortilla wraps at home then lettuce, tomato and peppercorn ranch. Then we toast the wraps; they turned out like kfc twisters. Yum!

use 'em up or toss 'em out!
I had 7 pouches of those hilarious Barilla Rotini in stock. I recall them being a huge steal at the time. Family wasmeh about them for the most part but did their best to eat up the others....but with BB dates looming ( or already passed ) I had to create something.
A casserole appeared after I slowly softened all the pasta by sauteing it in EVOO, added onions, dry Italian herbs, broccoli crowns, corn niblets, chick peas and a few jars of Classico Alfredo sauce. Simmered some more then tossed in bits of sun dried tomatoes and cashews. These were packets left over from salad kits, no one ever eats them, they toss them in the door of the fridge.
Final product was pretty decent!

Making mini homemade pizzas for supper tonight. Toppings: gattuso pizza sauce, Olymel pepperoni slices, sliced mushrooms, diced red & green peppers, sprinkling of red onions topped with lots of mozza cheese.

I'm kind of a sucker for a compliment.....of my cooking that is. Both DS and DD mentioned a few times over how good that homemade pizza was the other night. So this morning I caved and mixed up a batch of pizza dough, should give me 2 large pizza pies.

I have to host a test webinar at 5 pm so we needed something simple and easy for dinner. So we are going to make Chicken Wings for Mom, BBQ Chicken Chunks for me, with Oven Fries and a Cesar Salad.

..did a NFLD jiggs dinner, found a beef roast from a clod of beef I bought early last Fall in the freezer (I thought they were all gone!) so it was nice surprise and still tasty!!! Made a butter pecan cake this morning (cake mix) and topped with a cream cheese frosting that I made..lost of leftovers for tomorrow!!

Pulled Homemade Mac & Cheese from the freezer, after spending over 2 hours working with IT trying to get my laptop working correctly (still not working correctly, try again Monday) it is quick and easy. Normally I would serve with a Salad but I had a Salad for lunch so pretty sure it will just be Mac & Cheese, I am good with it.
