I have a wedge of blue cheese that we meant to eat up, so I'm going to attempt to make a blue cheese bow tie pasta dish.
It has chopped walnuts, lemon zest, garlic and chili flakes in it. The cooked pasta gets tossed in a pan with the pasta water
added to create the creamy sauce. Hope it turns out.
UPDATE:
I needed MORE sauce! Once it cooled sitting in the pan the pasta sucked up most of the sauce.
So.... I made a roux in a different pan, whisked the white sauce to within an inch of its life!
Folded in 2 cups of grated extra old white cheddar cheese until it all melted then poured the

Last night was Chicken thighs/green beans and sweet potato. It was so good. You would think I was getting sick of eating this all the time but I am not...I'm actually craving it again for dinner tonight!

Take out Indian food-cost me $40 and good for at least 4 servings of rice, naan, aloo gobi and butter chicken. Yum.

I made a Big Mac meal salad. Instead of fries I air fried mini potatoes and served with a salad and beyond burger patty with Mac sauce as the dressing for the salad. Loads of onions, tomatoes and pickles.

I took some creamy potato leek soup out of the freezer and that was a late lunch/ early dinner even though it was sunny and hot here today (23)

Last night I prepped one of these to try it out ( NF for $7.99 ).
It was laughable the small amount of " veg " that was inside the one plastic pouch but there was
ample beef and sauce in the other bag. So I sliced up about 2 cups worth of bell peppers, carrots,
celery and onions and boiled up a 1/2 bag of wide egg noodles.
It was FANTASTIC! The beef was super tender, the sauce had heat and a tinge of sweetness too.
I ate a small portion and divided the remainder between 2 work meals for the guys for today.

I made a “chickun” ceaser salad using Swap foods vegan chicken and I made a ceaser dressing with a hummus base and garlic croutons with silver hills leftover bread slices.

What I love about it @walkonby is I ALWAYS have it in the fridge, I can control the garlic and salt and zippyness of the lemon. Soooooo easy and yummy.
We had a later lunch so that’s more like dinner so tonight may be a strawberry protein shake.
Lunch/dinner was a yea to use up odds and sods in the fridge. So the last of the 2 beyond burgers with balsamic caramelized onions, guacamole and a bit of vegan cheddar cheese all wrapped in a tortilla like a crunch wrap. The side was mini cucumber and tomato salad with the last bit of hummus ceaser dressing on it. Mmmmmmmmm. And the best part…….dh cleaned up

The penne is cooked, chilling in the fridge. Celery, pink onion, baby cuc's are diced, carrot
is shredded. 2/3 of a can of drained, rinsed black beans and 1/2 can drained and sliced Kalamata
olives will mix with the last 1/3 of a bag of salad kit greens to become a cold pasta salad.
I'll be dicing up 2 jars of sun-dried tomatoes, along with the oil to add to the flavour.
If it " needs " a dressing I'll probably use a balsamic oil based bottled one.
Yeah, it's so early BUT I want to give this salad lots of time to get very CHILL ( for dinner)
